I had to try it. The owner John said it was his second day open for lunch and had everything baked and ready to go. I had the beef enchilada and couldn't believe the quality coming from a truck! This rivals some of the best Mexican restaurants I've ever been to. The beef quality was amazing, the sauce was bursting with flavor and even the beans were exceptional.
