I found Five Valley Taxidermy online, and gave Jarren a call. I was able to bring the head in that same morning. I just got my european mount back last night- and I am SOOO impressed. He let me pick out which wood plaque to have it mounted on when I dropped it off, and made sure to show me him writing my name on the plaque & putting a tag on the antlers so I wouldn't worry it would get switched with someone else's.
