It is a small, beautiful place that overlooks the canal! The vegan miso ramen was the best ramen I have ever had. If we come back to Amsterdam we will surely return.

Found Vatten while we were walking back to our hotel. We both love Ramen and decided to try it. It was a little busy and loved the view. It has windows right on the canal. The server told us that they also have a downstairs area so we walked down. No one else was there so we got a prime time seat. Ordering was easy as we got the VATTEN TONKOTSU RAMEN. It had great flavor and was very happy with the portion size. My only negative and this is a small one, was the service was a little lackluster. Because we were downstairs by ourselves we had to flag our server down on a few occasions. Overall it was a great experience and I would come back.

This absolutely the best Ramen I've ever had. !!! The people are nice, friendly and welcoming. My fiancé and I had the Chicken Ramen, with added grilled veggies! it was heaven! . I The broth is amazing you can taste all the flavors and the veggies added so much more. We also had the sake flights. He had the original set and I had the Fruity set and the Salt n Yuzu , it was fabulous it taste like grapefruit candy, Delicious. . Also my fiancé was stationed in Japan for 3 years and he said this was the best Ramen he's had since leaving. Check this place out if you can, it's a must!!

Having had ramen at probably a dozen of the finest rated in New York City and plenty of other large cities, the chicken-based broth here to my memory may be the finest to ever pass my lips. To say that it's a shocker is an understatement. This is brilliance, no question, so the other reviews here, a couple which appear fake, are utterly useless to my eye. Maybe it's the local chickens which surely play a part in the mix, and no doubt the raw product here is better than the crap U.S. food producers are turning out, sickly birds consuming large amounts of vet-pharma chemicals, never seeing the sun. But I think it's likely more that the chef in the kitchen that really knows his business and spends a long day preparing the base. I tend to not get overly excited about presentation in ramen, and the view from above the bowl here won't bring the wows and cameras out. It's a pretty generic presentation. Portion size I like that they aren't trying to drown you with too much of everything. Too many ramen establishments try to out-volume you. It ain't about quantity, folks. It's about taste. I have to say they have it in spades here. Came with a table of four, chose the Vatten Ramen, Spicy. Spice comes on the side which is a bit odd to my thinking. Lots they could have done to kick up the view and side ingredients, but the broth here really is the star and I'm OK with that. The edamame to start looked and tasted a few hours past its prime. Bonus: be sure to try out the Japanese style toilets downstairs. I'd wanted to try one for years, and now that I have, lets just say I thought I was too old to feel like I'd just lost my virginity, but apparently not :).

Right. First of all I'm a foodie so I review about the food, don't give a crap about service or decor. Vatten Ramen, I had high hopes, riding on the wave of new Ramen places in Amsterdam, the well marketed announcement of Vatten Ramen was quite something. And I couldn't wait to try it out. There's one rule in Ramen and that's; There are no rules in Ramen! So, you have to admire all the quite unique bowls they server here, personally, I'm more of a traditionalists when it comes to Ramen. I very much appreciate all the regional variety in Japan and do like slight nuances but i'm not into the big bold statements (Truffel etc.) So, I had one option, the Chicken broth Ramen. Where I have to say, I did like to broth and liked the toppings. Broth had a nice fatty touch to it and decent depth of chicken flavor. The ramen itself where nicely coocked. But do prefer a slightly thicker noodle. However, maybe we are getting spoiled in Amsterdam, because I can find a lot better Ramen (even Chicken!) And combined with the complete fail on the egg, I don't think I'll be coming back soon unless they introduce other classics like Tonkotsu Shoyu and Shio. Vatten makes a reasonable second, but my Nr. 1, which is still the only one that comes close to the real thing in Japan is still Sapporo Ramen Sora.

    The regular ramen with egg.

I'm traveling with a group of 7 and let me say, all of us agree that this is the best ramen we've ever had. We also got the dumplings and they were amazing. The ramen noodles were so flavorful and soft. The green tea wasn't sweet, it was perfect. I highly recommend coming here if you want the best ramen in the world. Not even kidding! The service was amazing as well. Loved how quiet and chill the whole atmosphere was!

This is their delicious "standard" chicken Ramen.

By far the best ramen place in Amsterdam. Great authentic food, great people, I strongly recommend it!

Truffle Ramen. Clear and weak flavored broth. Egg was an extra topping. Very disappointing dish for 22 euro.

We are a group of 3 and we've all been to Japan and regularly eat Japanese food. Touted as "the best ramen restaurant in town" and run by a "Michelin chef", our expectations were high. Unfortunately, they weren't met at all and we would summarise the whole restaurant in two words: overhyped and overpriced. (-) Overhyped: the chef has a Bib Gourmand, not an actual michelin-star. Their own website and several reviews/blogs are stating this incorrectly which is a marketing trap! (-) Very limited choice: they only served chicken-based ramen. (-) The actual chicken was plain cooked meat slices, not marinated or anything. They called it "char shu chicken" which is weird because char shu is supposed to be marinated and roasted. (-) The soup taste was ok, nothing special. (-) Overpriced: we paid over 60 euro for 3 bowls of ramen + toppings and 1 portion of gyoza excl drinks. Our total bill was over 100 euro. The toppings were necessary to make the ramen an actual dish and still we were not full. (+) The service was good though and the post-a-picture-on-instagram-and-receive-a-free-drink promo was nice. (+) The interior was nice and modern. Overall, we do not recommend this place unfortunately.

Staff don't bother to find tables for you; they let customers figure things out among themselves. Alright. We eventually grabbed a table after 5-10 minutes, then had our order taken 10 minutes later. The food took a long time to come out: about 40 minutes (other than 1 appy that came out after 20). Good thing it was tasty. We got: -plantain fries (€6) -- tasty, especially with the sweet dipping sauce, but you get about 8 fries, so not great value. -okonomiyaki (€12.90) -- this was wonderful. So many lovely textures, flavours, and seasoned beautifully. This was the highlight of the meal for me. -vegan plate (€18.90) -- really nicely designed plate, with a base of brown rice, with a sort of Japanese slaw, vegan chicken katsu, tempura (apparently, though I didn't notice it), and stir fried veggies. Super tasty stuff. Not the biggest portion, but not bad either. My friends each got the crispy roti wrap (€14.90), which they loved, and the taste I had was great. Overall, great food, not the best dining experience. Perhaps my experience wasn't representative. I'd go back for the okonomiyaki alone.
