Ah, the delicious Dutch custom of eating herring raw from the fist, as we Dutchies do. With raw onions to soften the taste, IF nexessary. I have already been by André Ebbers' location twice, and trust me, this year the herring is still fat, juicy, and a beautiful sweet taste.
We eat it on a soft, white bread bun for lunch. My husband follows that up with a smoked belly salmon sandwich -- also delicious.
Fortunately, when the herring becomes 'less' in quality, there are plenty of fishy choices left to satisfy the discriminating palate. André has gorgeous fresh fish, already fileed if you wish or he performs it as a free service to your order. The food cart features many fresh types, from red gurnard to cod to smoked eel and Swedish herring in a jar.
There are also ready-made meals available, such as teriyaki fish with vegetables, or salmon / tuna wraps, which I recommend. Another favorite is the fried fish, of course. Let's not forget the Dutch 'kibbeling' which is either a white fish or cod fried. Definitely worth a try!
