It was founded by brothers Michael and David Ieronimo and their partners Christopher Urban and Kyle Ondrush. The two brothers started out as homebrewers in their mother's kitchen in the late 1980s. By 2004, David's brother-in-law Christopher and Michael's co-worker Kyle had also come into the fold. The four formed a homebrew club and brewed together out of a garage. The homebrew club evolved into a homebrewing obsession and the next logical step was starting their own brewery. They chose the name "Brass Works" as a reference to "The Brass City": the official nickname of the city of Waterbury. Kyle retired from the brewery in 2021, but the other three partners still continue to share their passion for good beer. I first visited Brass Works in June 2016. I was driving around the state visiting some breweries that were new to me. The interior of the taproom was really nice; lots of neat decorations. During my stay, I ordered a sampler flight of five beers which included: "Wee Windy English Bitter Ale", "Sweaty Sisters Blonde Ale", "Abel Porter", "Uncle Zac's Stout", and "Double Bird IPA". The latter was my favorite of the bunch; great notes of Amarillo hops! I ended up purchasing a growler of that one to bring home. Keep up the good work gentlemen!

Everything was very clean. Parking was a bit of a struggle - there was street parking above, below, and across, and a huge lot in the back. Supposedly there's a backdoor from the lower lot - those who tried found it to be locked. The food was delicious - my local burger was cooked medium, and the fries were little circles! They were well cooked but some had much more salt then others

The menu looked pretty good so we started with some apps. Beer cheese- definitely a different twist than I expected but it was great. Very flavorful, really beer forward. The bruschetta was ridiculously amazing!! The cucumber salsa was missing something but ok, needed some acid or heat. My disappointment started when they brought out our meal, (we still had two apps to go, I hate my meal coming out with or before the rest of our apps. I had the hot honey chicken and NE Clam chowder. The chowder was brown and was not what I was looking for, I packaged up to go. It was primarily the brown I assume the roux went farther than it should have or there is something else in it.. The hot honey chicken was ok, the chicken was paper thin , tasted mostly arugula no heat, no sweet... I'd switch out the bread for a roll next time and douse it with hot sauce. The cottage fries are out of this world and I would come back for beverages and those!! My partner had the biria sandwich which was fire, also had a salad which was really good as well. The cookies are really amazing! Actual Dessert- I am struggling with we opted for the Chocolate cake which was literally melting- did not think it was ice cream so not sure why we had a puddle in a box when we got home. I want to try other things, as we had some good and some not so good, so we'll be back and update again after another try.

And speed bumps, drive with caution. I went for their 2026 restaurant week which was designed for two people but I was allowed the second course to have for lunch the next day. (Reheats great!) I had the mozzarella sticks, smash burger, and churros. All were warm and so filling. I tried their beer, and I'm sure it was great for those who like beer! I had two samples and ended up falling in love with the Big T IPA. Their craft beer selection is outstanding! The space itself is gorgeous. The outdoor patio is beautiful, bright, and inviting, totally ideal for sunny afternoons or a relaxed evening with friends. Inside, things were quiet when I arrived, but it quickly started filling up. Service was just as impressive. My bartender greeted me with a genuine smile and gave spot-on recommendations. The food? Fantastic. Over the top. I ordered the Poutine. The fries were perfectly crispy, the queso was rich and flavorful, and the egg on my dish was absolute perfection. Everything was fresh, hearty, and designed to complement the beer list. I almost ordered the frittata (which I hear is massive) and definitely plan to try a pizza next time. Even though it's about an hour's drive for me, ClockTown Brewing is worth the trip.
