Fish and chips went in the fryer, and I started salivating at the thought of my first bite of authentic British fish and chips. When my order started to come up, I was quite confused. In NI we are accustomed to thick, heavy batter with a hard outer shell at either end and often a layer of dough underneath. In England, I can be fairly confident about getting very light batter which is neither hard nor undercooked.
