I wish I hadn't waited so long to try Sapiens! I eat Paleo for health/medical reasons and saw Sapiens months ago but never tried because I was usually in the area during lunch time/hours they aren't open. Made a resy for a Friday night and so glad I finally made it in!
The hostess/server Korin was amazing! She was so easy to talk to, shared some personal experiences and learnings, was extremely knowledgeable about menu items and ingredients, and had great recommendations.
During our experience, a delivery service person was talking loudly on speakerphone and the owner Roman asked him to talk on his phone outside. I really appreciated Roman caring about his customers and preserving the ambiance and environment inside his establishment. I felt valued as a customer.
The food was so flavorful and cooked perfectly. We tried the bone broth - great flavor, perfect saltiness, and fresh herbs, escargot - very generous portion with paleo bread, stuffed mushrooms - huge chunks of crab, Friday special 24 oz bone in ribeye with root veggie augratin and veggies, crème caramel and caramel ice cream. The desserts were perfectly sweetened with monk fruit and so thick and creamy. I personally don't like the taste or aftertaste of dairy and sugar and these were so wonderful with none of that weird stuff!
Our visit ended with a chat with Roman who shared about his health journey and what led him to this lifestyle, plant paradoxes, and tons of fun topics and facts about diet and lifestyle and how food is medicine. Very thoughtful and engaging conversation.
