The atmosphere was dramatic and modern, definitely an bold choice for Pala but it works. While you can see the hustle and lights of the casino, the sounds are blocked. Our waitress was very attentive but felt like she was unsure of pacing and steps of service as to when she would place flatware, pick up plates and so on but you could see the effort was there. The food, oysters and pearls were amazing, perfect balance of sweet and briny, the house bread was a drier dupe of milk breads, so close yet so far. The caesar salad, nothing offensive, nothing outstanding. The potato grand mere, a simple highlight of the meal, the crunchy hen of the wood mushrooms also a great side. The waygu strip, was magical, perfectly cooked, beautifully plated. Is this the best steakhouse on the 76 casino trail? Not yet, that distinction still belongs to Black and Blue at Valley View. However, this concept is a glisten of hope for Pala, pre-covid, their culinary programs would give some Vegas strip properties a run for thier money.
