I ran into these guys at the Golden Hill and the Water Front Farmers' Markets.' The are offering some traditional and not so traditional Chinese Dumplings. Although they offer Shanghai Red Dumplings, I went for a fusion California Green with ground pork and vegetables dressed with a artisenal fresh mayonnaise infused with basil and garnished with cilantro for I believe was $6 for five medium size dumplings.
Just so you know, you can go crazy with the available sauces or have absolutely no sauces at all. The dumpling arrived piping hot and tasted great. I was very happy with the dumpling skin or wrappers because they offered a good thickness that did not break apart when handling the dumplings. The skins had very good flavor and texture. Also, they pan fried them so it not only added to the texture of the dumplings but also their nice color.
The ground pork inside the dumpling was very tender and came with absolute seasoning. It was vert tasty and juicy. I liked the melee of vegetables because it broke up the heartiness of the pork. The California Green sauce on top was good, but I prefer dunk my dumplings into a more traditional brown vinegar or a quality soy sauce as I did with these.
