I discovered Kodiak Cakes after searching for "healthy waffles". Headed to Safeway and picked up a box of their Thick & Fluffy Buttermilk and Vanilla Power Waffles. The six pack is pricey ($8 or so) compared to Eggo but I'll gladly pay more for better ingredients. The waffles are dark brown in color, tasty, can easily burn in the toaster and surprisingly weren't as dry as I had anticipated. I followed the toasting instructions but that resulted in a soggy experience. On my second try I toasted them like a normal waffle and they came out a lot better. Further research revealed that these waffles have more carbs, calories and sugar than Eggo, but I guess the benefit is more protein. read more
