Tried Coya for the first time and it was such a great experience! The ink squid risotto in creamy sauce was rich and flavorful. The grilled octopus was perfectly cooked, tender with a nice char, and paired well with the potatoes. The ceviche was fresh, tangy, and balanced with corn, sweet potato, and crispy cancha.
