If you haven't tried Pop's Tots in the Rimrock Mall food truck park, you're missing out! We tried Mom's Breakfast Tots yesterday and can willingly admit we're obsessed. The tater tots are crispy, the sausage gravy is yummy, the over medium egg was cooked to perfection, and the freshly cooked bacon brought it over the top. Ain't no pre-made bacon bits around here! Ron (Pop) is serving delicious food with an incredible story. He's a U.S. vet trying to make his and his mom's dreams come true. I had the opportunity to chat with him yesterday and we can't wish him enough success. Great, friendly service to match the food he serves.
