I love Proof Bread! Their sourdough bread is one of my absolute favorites. I actually only go to PB for the sourdough loaf. It's baked perfectly, and the inside is soft. A loaf doesn't last very long in our house. I have yet to try one of their delectable looking pastries. It's not because I'm not interested -- I'm very interested -- but because I usually come here after I've already had a meal. I don't come to downtown Mesa often, but when I do, it's usually for a meal, but I make a point to stop at Proof Bread to get a loaf. The staff is always lovely and helpful. I like the open concept of the bakery. It's always fun to be able to see the staff in action. Plus, the sweet smell of baked goods is a warm welcome.
