I enter on Friday 2/27 at 11:30 AM. The young girl that was working at the front helped me check out. I asked her for a Genovese slice of pizza. I know they're vegetarian, but I wanted to double check with her. She responds as "vegetarian means no meat, right"? All employees working at a food establishment should know what vegetarian means. This was quite baffling to hear. I asked her for a new slice because the one that was out on display was visibly burned and the other slice was touching pepperoni from the meat pizza. As mentioned, I'm a vegetarian. Therefore, I could not have either one of those slices. She proceeds to say that's how the pizzas are. They are slightly burned because they are so sourdough. While I can accept this answer, I do not accept the fact that she would not be willing to give me another slice as a paying customer. She insensitively said she can't give me a new one until all the old slices are taken up. She mentioned that this is their procedure. According to this, they are saying that they will not provide a proper product unless the old, damaged product, or unacceptable by the customer is used up first. If this is their business model, then it is apparent they do not value customer service. This business should have the competence to understand that if they want to sell a product, they cannot sell it in a condition that the customer is not satisfied with. Most importantly, being a vegetarian, they should have the sensitivity to understand that if a slice is touching the meat product then they cannot consume it. And again, the employee completely disregarded my health and religious beliefs by not accommodating me. You usually won't encounter problems when you're just trying to buy bread. However, it reflects on the business's employees greatly when there is a problem and they do not value customer service by resolving or accommodating the customer's satisfaction. I will be switching to Noble exclusively. Especially since it's so readily available at the farmers markets and stores. read more

Flew in from Oregon and found this place on Yelp. I love some sourdough and had to stop here based on all the positive reviews. This place did not disappoint. The sourdough croissants were amazing and 10/10 recommend. Also, don't sleep on the ham and cheese croissants. My little guy loves bread, so we went in over the weekend to get him guaranteed GOOD BREAD. We greeted immediately, and my son was given a cute sticker. I had been here before, but that was so long ago when Main Street Harvest was still open next door. Super cute bakery located in Downtown Mesa. A limited amount of 3 hour parking is located in front of the store. There was plenty of parking available on a weekday morning. As soon as you walk I. The store you see fresh bread being made and the smell of the bread pulls you to the counter! I got a dirty iced Chai, it was good but I wish the chai spices stood out a little more. I also got their green olive loaf and it was heavenly, it smelled so good I had to try a bite before I even drove away. I also received great and quick service. Got here right as they opened and ordered 4 morning buns, 3 chocolate chip cookies, and 1 chocolate. It was wonderful and now I am upset that proof is it in my neighborhood in Missouri. It is a cute spot. The majority of the space is dedicated to baking with probably a 6x4 walk space to look at some of their pastry options behind the glass, two registers, and front window shelving space for sliced breads. It's the most wonderful time of the year! Holiday treats from Proof Bread are just what we needed for a beautiful Thanksgiving dinner! I was prompted to place my Thanksgiving order in advance so I could pick up my order with stress free ease. Today was pickup day and I lucked out with a street parking space right out front. There was a short line at the bakery door but then I saw the order pickup tent outside and was absolutely thrilled with how convenient and oh so easy peasy breezy it was! They were absolutely organized and ready for preorder pickups and so friendly too! They even had some items available to order right there if I needed a few other things. Note to self: if I want to try the brioche rolls next time I need to get there earlier or if it's available order those too! They packed my order so neatly and it was all perfectly and neatly packed! I can't wait to see how much our guests enjoy the centerpiece sourdough and rosemary twists as I know they are as tasty as they are beautiful! read more

Anyone looking to come here, there is 3-hour parking in front of the place, if you go early in the AM I'm sure there's a spot to park. I parked in the back and walked around. A lot of the pastries looked really well done, or crunchy from the looks. I got quite a few pastries! I also ordered a cappuccino, it was ok. When I checked out I seen some pastries refrigerated. I got a pain au chocolat, tried some of the rosemary sea salt twist, and the pizza - all were so good! I am not the biggest sourdough fan and you can definitely tell that they're made out of sourdough, so maybe for you that's a good thing! Despite not being the biggest sourdough person, I really enjoyed everything I had. The service is pretty quick, nothing much of note. There is not seating inside but there are a couple tables outside. It's mostly meant to be taken to go. I can't believe I waited so long in my life to experience Proof. Their pastries and sourdough are some of the best I've had in my entire life! I dropped in for the first time a few weeks ago and ordered 6 of their pastries, they were having a buy 6 get $6 off, so I tried a few of their croissants and their cookies. The sourdough croissant was my favorite of the savory treats and my favorite sweet was the chocolate chip cookie. It is baked and flavored to perfection and a nice large share size! I also enjoyed their rosemary twist and chocolate croissant. This past weekend I visited again and took home a sourdough loaf which lasted me the whole week and was delicious! We've only been to the one in Old Town Mesa, by the fine art theater. Just glad its not next door, because I'd start living there! Not to sound like a hoity toity food snob, (kind of like when someone says they are not a "conspiracy theorist," but then they go into great lengths about conspiracies -- I'll be a snob here. Their pastries and breads are next level. They aren't just baking an excellent product (which would be enough to make me happy in area that lacks artisan bakers) they are "crafting" baking art. I hate to compare to the European Bakery craft (because there are plenty of great American bakers) but Europe does have that as a trademark (at least France, Switzerland, Germany, and Italy.) If all I ate eat each day was one of their croissants, it would be enough - theirs just flake away from the outside, and then a tender airy sourdough inside. Pain au Chocolate - excellent. My favorites are the Khorasan loaf, which stays fresh for so long; the olive loaf, which includes olives from Queen Creek Olive Mill; and the fruit & nut loaf. The croissants also include the Proof starter (named Harriet) and they are truly the best - all other croissants fall short in comparison. I love their plain croissant for chicken salad sandwiches, and can't resist the rosemary twist, DNA chocolate croissant, and the almond croissant. The english muffins are phenomenal for breakfast sandwiches. What a special place. My husband and I walked in here for the first time recently and picked up a few different goodies. But besides the bread and pastries, the ambiance and atmosphere here is just so special. Rhythmic music was bumping (kinda wish I Shazam'ed the song lol) and you're able to see employees making bread. I've been baking rather seriously for about a year now, mostly sourdough , and as things on social media happen I started following Proof Bread on Instagram. So, I sort of gotten to know them. Now, I don't live in Mesa, but was visiting the area (soccer, of course ) and realized Proof Bread has a bakery there. Of course, I went; first thing Sunday morning. I love Proof Bread! Their sourdough bread is one of my absolute favorites. I actually only go to PB for the sourdough loaf. It's baked perfectly, and the inside is soft. A loaf doesn't last very long in our house. I have yet to try one of their delectable looking pastries. It's not because I'm not interested -- I'm very interested -- but because I usually come here after I've already had a meal. I don't come to downtown Mesa often, but when I do, it's usually for a meal, but I make a point to stop at Proof Bread to get a loaf. The staff is always lovely and helpful. I like the open concept of the bakery. It's always fun to be able to see the staff in action. Plus, the sweet smell of baked goods is a warm welcome. My wife brought home some pastries from Proof and wow I was super impressed with flavor and quality of ingredients! The Pain au chocolat was absolutely phenomenal! Friendly and fabulous bakery. With a 'gluten intolerant' diagnosis, I was skeptical when they said their flour products would be ok for me, and they were right! We watched the videos, we planned to go to this store and we finally got there, today! It lived up to the hype. It was all we had hope... we just wished we had this in Florida! LOVE THIS BREAD! After waiting what feels like a century to try proof bread at its brick and mortar, I was not disappointed! Upon walking in, the entire place smelled of freshly baked bread. When I called the location I was told to come in and tell them what was missing and they would replace I said that was the whole point of delivery I couldn't get into the location. She then said they could refund and it would take 3+ days for the refund. Thanks to our trusted Yelp, I was able to find this gem yesterday. I don't usually go to farmers markets so I've never heard of Proof before. My husband went and picked up some delicious pastries and fresh bread for us. It was hard to choose so we got a bit of everything, two almond croissants, two pain at chocolat, one morning bun, one lemon raspberry danish, and two boules, one olive and one cinnamon raisin. I believe we got a couple of dollars off because of our bigger order, which was nice. All the pastries were super flakey and had many many layers of goodness. The almond croissant is huge and the filling is just the right amount and the right sweetness. The same goes for the pain au chocolat. I am used to French pastries which are not super sweet and those are about the closest I've come to French tasting pastries in Arizona. The morning bun had a nice touch of cinnamon and the taste of lemon raspberry curd in the Danish pastry was so fresh and tangy. It was not like any Danish pastry I've ever had before since it was also flaky and had the texture of a croissant. I'm used to the pillowy more doughy one but this tasted just as great. We also tried the olive boule yesterday with some labne (a middle eastern/Lebanese strained yogurt dip that we purchase from the Middle Eastern store) and it tasted so good. We normally eat labne with bread and some olives any way so this was a perfect pairing. We will be trying the cinnamon raisin boule today, probably with some butter or a piece of cheddar cheese to contrast. My husband was told the boules freeze really well so we may be grabbing more next time to use during the week. PROOF IS HIRING and will teach if you have no baking experience.
