We've gone through different suppliers until we got the best quality meats at the most affordable prices. We make our own pho (beef, chicken, vegetarian) stock and I can 100% gaureentee that no msg is added or to any of the other dishes we offer. Which we all eat ourselves. The staff are made of up international Vietnamese students and locals like myself which the boss has done intentionally to help them network and integrate into our society. The test for me is would I bring my own family an hour away to come and eat here? The answer is yes and I have. We have streamlined the process in which we prepare orders and I do personally feel that has affected the maximum quality we can offer but the boss made that call. Everything that is not sold is taken home by staff and we spend about 3 hours each morning rolling those rice paper rolls. We also make all the sauces. We've just opened shop 2 in Ashfield Mall too!
