The lemon kept it bright, the olive oil added a subtle richness, and the shortbread brought a great buttery crunch. It felt more like a thoughtfully composed dessert than just ice cream with toppings. The real star is the soft serve itself. It's ridiculously smooth and creamy. My girlfriend isn't a big dessert person and doesn't like things that are too sweet. After one bite she looked at me and said, "This is the best ice cream I've ever put in my mouth."
