This was one of my most anticipated restaurants for my trip to Scandinavia. I really like fine dining, but also like a bit of whimsy and a bit of fun, and Alouette fits the bill for folks who are looking for a relaxed, fancy meal out with a memorable hospitality / overall experience. From even my early emails with the team, adjusting my reservation and ensuring they could meet my dietary restrictions, I felt like they were as just excited as I was to be dining here. I went to Alouette's new digs (v. 2.0), right across from King's Garden and more centrally located. I had heard so much about the charm of the old location but also just really enjoyed the new one! You enter through a garden/patio area and can see guests who decided to end their meal with patio drinks. I had someone promptly greet me at the door when I arrived. I opted for the standard wine pairing (6 pours) because I was doing a bit of an early birthday celebration. And it was such a delight! Great, perfect pairings, generous pours (including some complimentary top-off's). The food is very, very good, with no meh bites whatsoever. I personally think they are already at 2* status; Michelin might just be waiting for the ceremony to be in Copenhagen in 2026. Chef Nick's specialty are his sauces, which were so perfectly flavorful but light, they were drinkable; no sauce I had on my trip compared to these. The focus on sustainability - using every piece of every ingredient throughout the menu, as well as sourcing locally as much as possible, was a highlight to me. My favorite two bites were probably the reimagined apple pie - very thin sliced layers of apple, cooked down with amazing nostalgic flavors and also the cabbage beignet starter bite - salty, crunchy, light yumminess! I had the privilege of sitting at the chef's table, which was an unrivaled experience to me, because you get a more intimate interaction with staff and get to see all of the food being prepared. The staff here is very international, and it was a delight to even meet someone who used to live in my hometown of Nashville! The staff truly made my night & experience. It felt more like hanging out with a group of friends than going to a restaurant. They knew where I had eaten for lunch that day (tipped off by a spouse who worked in the other restaurant) and greeted me genuinely asking about it, chatted with me about my trip, gave me great recommendations for the rest of my trip, and were overall just really invested in ensuring I had a wonderful night. I happened to go the evening of the Eurovision finals, which I try to watch every year. It turned out the sommelier was also a huge Eurovision fan and he turned the kitchen iPad to YouTube so we could stream it together. A hilarious and fun evening that ended up being just a top fun restaurant experience for me. I think sometimes it can feel like a restaurant treated you specifically especially well, but when I talk to friends who have also dined here, they echo my experience: really personalized, but ultimately unreal and extremely memorable hospitality. For a one Michelin star in Scandinavia, this is also one of the more reasonably priced options. To me, Alouette is a must-try when looking for a fancy meal in Copenhagen.

I compared that meal to the meal we had at Alouette years back and Per Se felt like Applebees. First off the space and atmosphere amazing. My husband made known my dietary restriction when making the reservation. My husband and I got the same meals except mine was carefully and skillfully made without dairy. Every bite was unique and incredible. The staff knew every dish with detail and answered any question we had. I got up to use the restroom and when I got back a flower was placed at my place setting. We were very taken care of and we felt like family when we left. Years later I can't stop thinking about it. The meal here was truly unforgettable. If you go to Copenhagen, it will be a wasted trip if you don't eat here.

Sauce was dark and rich, yet not at all too heavy for a Swedish summer day. With the potatoes, It was a perfect balance of acid/salt/sweet/creamy flavors. Kenneth's Favorite: A creation of one of the owner's, Kenneth -- Vanilla ice cream, espresso and hazelnut crunch. Delicious and refreshing. Quite the pick-me-up. My husband had the beef tartare (råbiff) and the deconstruction was gorgeous -- see the photo I've uploaded. I was assured it tasted as good as it looked. The service (by Kenneth himself), was warm and friendly. Almost like we'd run into a long lost friend. This was a meal of highest quality ingredients, cooked and served with love. The beef tongue was perfectly tender and the wild goose was beautifully tender. I can't say enough about their bread. It's like their version of a sour dough brioche that has been finished off on the grill. And the dip that it comes with is crack. The best part is you can have as much of it as you like. The wine pairings also went very well with the courses. It really complemented the dishes perfectly. And after dinner, you can even sit in their garden with a warm fire pit. KenScale: 8.5/10 Visit: February 2024…read more[Note: After some deliberations, I have decided to upgrade all restaurants receiving 8.5 or 8.75 KenScale to five Yelp stars from four.] Perhaps no restaurant in the gastronomical heaven of Copenhagen has as much buzz as Alchemist at the moment. The chef-owner Rasmus Munk believes in the idea of holistic cuisine that redefines dining through multi-sensory experience and fusing diverse elements from philosophy, sustainability, technology and arts, and ever since its opening Alchemist has received almost unparalleled level of praise and attention for its innovative approach to fine dining. For our Copenhagen trip, I very much wanted to check out what Alchemist had to offer and was lucky to secure a reservation for my wife Jun and me. After opening a giant metal door (which almost reminded me of entering some fantasy world of dragons and fairies) of an industrial building, we were led to a dark room with dazzling lights where a female dancer started performing in front of us before handing us a thinly sliced black seaweed-based snack. Our dining experience got even more surreal thereafter. Everything at Alchemist challenges your notion of a restaurant dining experience. Following the immersive experience, we were led to a lounge overlooking a brightly lit room where the kitchen staff was experimenting with different ingredients as if they were scientists researching the next-generation biology. The term for each of the small bites and dishes to come was "impression." It was in the lounge where ACT II (the dark room before was ACT I) began and we started getting more snacks while ordering cocktails and a bottle of wine to drink later. Some of these snacks were quite outstanding with ingenious touch, like the daisy cocktail with yuzu and mandarin, a sphere of gluten with langoustine tartare and caviar on top that generated smoke when we bit in the puff (hence the name "Smokey Ball"), an egg yolk emulsion (cleverly named "omelette") with Comte, pancetta and truffle, and an expression of Spain's bikini sandwich with jamon Iberico and gruyere cheese inside. After all the snacks were we then led to the main dining room that looks more like a planetarium than a restaurant. Throughout ACT III (which is further divided into four Scenes), the ceiling rotated through different video images, ranging from natural settings like ocean under the water to more provocative (and containing heavy political and environmental messages) such as blood cells, caged chickens and "surveillance" symbolized by stacks of computer screens. While we appreciated chef Munk's culinary vision to showcase that eating at a restaurant is not just about enjoying delicious food, at times these images distracted us from examining and savoring a series of dishes that started to arrive at our counter table. It probably didn't help that some of the dishes even had more graphic appearances that some diners might consider too disturbing, like a bowl resembling the surface of an eye (not surprisingly called "1984") with lobster and caviar to be dipped in the middle, a scoop of "Tongue Kiss" (fortunately, it was not a real tongue but a plastic model) where we were told to lick the habanero pepper and anchovy on the tongue's edge, or a mousse of lamb brain and truffle in the middle of a model of dissected brain (named "Food for Thought"). Some of my favorites included Marine Invaders (absolutely fantastic mix of crab and sea urchin, both of which are apparently invasive species in the ocean's ecosystem), Lobster Claw (a deconstructed representation of lobster roll with horseradish cream sauce and tomato powder), King Crab (utilizing crab tail that would've otherwise become food waste into almost like a fish cake with shrimp and langoustine layers), and Hunger (rabbit filet that tasted like a fine cured ham, and with harissa sauce that surprisingly worked well). The final savory course came in the form of chicken thigh glazed with Chinese sauce on a plastic model of chicken foot, followed by actual deboned chicken foot and sweet and sour broth of tom yum soup. Both of these dishes left a more lasting visual impression than how they actually tasted. The desserts also came in the form of small bites inspired by a variety of themes. Booking a table at Alchemist requires as much effort as some of the other finest dining destinations in Copenhagen. Make sure to sign up for a mailing list from the restaurant that will periodically announce when the next reservation window will open. The gigantic wine list at Alchemist was indeed a tour de force, with a fancy gadget that you can use to browse the bottles by categories such as country, region and grape type. At the end of the meal, chef Rasmus came out to greet and thank us for the visit. For a star chef who is probably one of the hottest names in the gastronomy world right now, we found him surprisingly approachable and humble.

The cheese foam bottom is reminiscent of a whipped, light sour cream and adds depth to the light fish. The shaved asparagus and fingerlimes add the perfect touch of crunch and acidity - Witch flounder, so delicate and mild in flavor, the purée adds depth to this dish while the bread topped outside creates structure.I've never had such a light piece of bread topping Love the garlic dollop and radicchio topping. Every part of this dish feels intentional - Sweetbreads: perfect cook on the meat, I love the light sherry paring with this since the main part of the dish is fried. I loved the combo of pickles and caramelized onion but I'm an onion lover. (Call me shriek) Definitely a nice contrast in texture and more of a main dish than the other 2 - Lamb: the only dish that didn't nail it for me. Cooked well but Felt under seasoned and I didn't have a distinct flavor profile or direction. A bit plain and forgettable - Dessert: tangy, creamy, a great cozy way to wrap up the meal.
