I started working with Stella at a time when I had been successfully counting calories for years, but knew that I was on the brink of stopping. Her idea of being able to be free of those confines (no matter how much comfort it gave me) was intriguing and refreshing. Working together, she helped me establish a framework for myself that I could use to make the healthiest decisions regarding food while still allowing me the indulgences that I craved. It took me a little while to put "everything in moderation" into practice effectively, but with her help it finally sunk in. Stella also challenged me to expand my horizons regarding what I ate, taught me how to make bread, and helped me find the confidence to experiment with my cooking. I've been working with Stella now for almost a year. It's been such a positive and fulfilling experience. I've learned to empower myself and approach lifestyle changes with my nutrition and fitness while balancing motivation and effort. So often in the past I struggled to stay consistent because I would get easily overwhelmed. I took Stella Loichot's class "Rustic Bread and Jam" a few days ago at South Seattle College. The course was delightful! The 4 hours went by way too quickly, but I came away with a new skill and delicious recipes. The bread has only 4 ingredients (unlike store-bought with the exhaustive list of ingredients and preservatives), it's easy, minimally hands-on, and flexible time-wise except for a long rise time that cannot be rushed. Of all the courses I've taken at SSC, this one's my favorite. Highly recommend!! read more

She used a very personalized approach and focused on areas that I could realistically improve, but most importantly, that I was ready and motivated enough to work on. I had only a few pounds to lose to reach my weight goal, and exercising more and more just wouldn't do it. She provided me with advises and tips about the way I eat and exercise that helped me reach my goal. She came up with ideas I had not thought about before. I liked that she was not trying to impose me a specific calendar or routine, but went with a one-at-a-time, small goal approach, which she understood I could sustain longer than one involving drastic changes to my daily routine.
