Gone are the days when you would have to wait for Simbang Gabi to eat Bibingka and Puto Bumbong. Normally sold right after the dawn (now sometimes evening) novena mass in anticipation of December 25, these rice cakes developed the reputation of being Christmas delicacies in the Philippines. However, even on a normal day, you can now experience the joy of the holidays by eating at Antonio's Coffee and Bibingka.
When I visited their stall in SM Fairview, the classic Bibingka (with salted egg only) was not available. What they have then were special (salted egg with cheese filling), super special (salted egg with queso de bola), original (salted egg and kesong puti), and premium (salted egg, queso de bola, and kesong puti). I was caught in between saving (read: ordering the cheapest which is special) and being carefree and adventurous (that is getting premium). In the end, I bought special Bibingka... but I didn't really save for I wasn't able to resist buying a serving of Puto Bumbong.
Now, the verdict:
The special Bibingka was served hot and it had the right blend of sweetness and saltiness. The texture is fine and soft. And, though Bibingka is usually cooked with fire from the top and from the bottom, what they gave me was not very much burnt. In a way, that's good. No need to avoid burnt portions. It was quality Bibingka. However, I missed quite a bit the smoky taste of the Bibingka from the market and Simbang Gabi stalls. And so I finished my last bite wondering how the premium one would taste.
The Puto Bumbong, I liked better. But I may be biased because I've always loved this sticky purple-colored rice cake more than Bibingka. Topped with grated coconut and sugar, this delicacy bursts with flavor and, with the varying textures of the sugar and the coconut combined with the sticky rice cake, it also offers quite an enjoyable sensation to the tongue.
All things considered, Antonio's Coffee and Bibingka is a must-try. The food they offer would make you believe na araw-araw laging Pasko. read more
