I am a New Orleans creole who knows & loves good Cajun/creole cuisine and this place has been my home ever since my first visit in December of 2019 & then moving to Huntsville on 3/16/26! So far I have tried the gumbo, boudin ball, boudin egg roll, daiquiri, crawfish, crabs, fried pork chops, natchitoches meat pies, po boys, banana pudding & boudin links. This place is literally heaven to me. With all that being said, I would like them to develop the gumbo roux a little longer so it's darker & deeper in flavor. I'd also like them to switch over to Leidenheimer french bread for the po boys & add a second line for order to cut down on wait time. Drove 30 miles to try this place. It did not disappoint. Everything we had was excellent. The gumbo was great, rice on the side so you can mix how you would like. Boudin balls were so good. I ordered more to take with us. Crab cake fries, just like everything else were great. It's not exactly a truck but it's order outside and the had some covered seating and plenty of tables to sit. First time visiting Arnaud's and I'm glad I did. It was just my daughter and me on a rainy day. Decided to try them out. She got her crawfish and I got the fish plate. Man was it good! So as I always say, first impressions are lasting impressions. Yes, it was a rainy day, yes, it was a cool day but none of that mattered. I LOVE and SWEAR by this place. Whenever I have visitors come to Huntsville I try to take them here. The food is ALWAYS hot and fresh and very flavorful. They always have fun creole/zydeco music playing him the background so if feels like your in New Orleans. It's kid friendly, and also by other food trucks . Consistent food and service. I've been going over a year now and I'm only disappointed if there are no boudin balls. Great outdoor seating, fast lines even when long and the crowd is mixed. The crawfish seasoning is done well and most items are reasonable cost. You can bring your own beverage, including alcohol. Boiled shrimp, fries, boudin balls, crab legs, crawfish - all recommended. The fried platters don't seem to offer as much in serving for the price. Haven't had the fried pork chop, but it looks amazing! I wish they were open Sundays but understand they deserve rest.
