I'm not sure you should be allowed to calm yourself a pizza place if you use a salamander.
If you're not aware, pizza is best cooked in a pizza oven. Stone is best. Steel does well too. The texture of the crust is improved by the combination of convection heat on the top and the direct heat from the floor of the oven.
The only alternative to make a good pizza is with a pizza stone. This is where you create the direct heat for the crust by preheating a stone surface in a traditional oven with racks rather than a flat cooking surface.
Sometimes, unfortunately, an entrepreneur will elect to attempt to save some money and buy a salamander. A salamander is like a toaster with a conveyor belt running through it. This toasts your pizza rather than baking it. This robs your pizza of the hot cooking surface and direct heat.
What results is a pizza that has the texture of toasted wonderbread. This is not the texture for great pizza.
