The texture of the crust is improved by the combination of convection heat on the top and the direct heat from the floor of the oven. The only alternative to make a good pizza is with a pizza stone. This is where you create the direct heat for the crust by preheating a stone surface in a traditional oven with racks rather than a flat cooking surface. Sometimes, unfortunately, an entrepreneur will elect to attempt to save some money and buy a salamander. A salamander is like a toaster with a conveyor belt running through it. This toasts your pizza rather than baking it. This robs your pizza of the hot cooking surface and direct heat. What results is a pizza that has the texture of toasted wonderbread. This is not the texture for great pizza. I walked in to Belisima. I said "oh, you use a salamander". I walked out the door and drove over to Napoli. I got a competent old fashioned pizza.

The crust is on the thicker side and has a satisfying crunch to it. When it comes to toppings, they don't skimp! Hard to find places that load up on toppings unless you pay for it. Prices are also quite reasonable for a local pizza place. In addition to pizza they have pastries and sandwiches that look amazing! I really wish I was able to try them. Service was friendly and inviting, and the restaurant is clean. Unfortunately, I don't get out to Kitchener too often but if I did I would definitely make this my go to place!

It's almost like they make pepperoni/cheese in advance and then throw the other toppings on after the fact. This results in loose toppings that don't stay on the pizza - and go everywhere. As 3 of these toppings (bacon, sausage and ground beef) are of the crumble variety, that means they go everywhere. They should have sprinkled more cheese on top / throughout to keep all of these toppings in place.
