They have an Instagram page where they post their location and hours, so it is very easy to figure out where they will be on any given day. Their favorite "haunt" is the Eastern Prom, and they're usually there for several hours. I can always count on getting my Korean food fix from them no matter which day it is. This is the absolute opposite of that. The owner of this food truck is incredible. He is passionate about what he does, and he wants to make his customers truly happy with his product. And he sure does. Vegan? Vegetarian? Gluten-free? Meat-eater? He's got you. And you aren't an after-thought. Cashew cheese? Homemade mushroom pate? Ghost pepper cheese? Carefully and perfectly selected vegetables to go with it all? It's unreal. It's affordable, delicious, and so thoughtfully put together. I hope this food truck truly succeeds and that everyone can enjoy what it has to offer. Portland's best.

I was actually delightfully overwhelmed by the generosity. My board had pickles and olives, homemade beet hummus, a homemade mushroom paté, a homemade wedge of cashew cheese, loads of berries and grapes and peppers and cucumbers and carrots, and a mound of crackers and bread. And, no, I didn't share. Because I like to feel full after eating something I spent money on (c'mon, new restaurants and other charcuterie board businesses: in the words of our freed girl Britney "give me, give me more, give more, give me, give me more"). Also that cashew cheese was *impressive*; I've been making my own nut-based cheeses for a decade and they're good, but this? This was exceptional. The people watching from the outdoor tables on Middle Street must be some of the best in the city. You could easily sip a glass of sake (the dreamy clouds was...dreamy) while eating a toro maki roll and marveling at the tourists waiting in a two hour Eventide line. But we ordered the lemongrass fried tofu salad, salmon toro sashimi and 3 maki rolls, including the green crab special. Everything tasted fresh and excellent with only Yosaku in the same league for Old Port sushi. Of course Yosaku is much more authentic Japanese than Mr. Tuna, though Mr. Tuna is more fun. Like most trendy Portland restaurants, lunch for two with a couple drinks each is $200 all in (get that Chase card!). Still, this is a huge, inventive menu with a great bar program and is one of the surprisingly better summertime outdoor seating options.

With tip it came to about $27 which I'm okay with paying if the food is fresh and flavorful. The guys working the truck were all very friendly and the food came out in no time! We took our first bites and said good but was missing something.. I ran back to the truck to ask for some hot sauce and boy did they deliver! It was exactly what the tacos needed to kick them up to the next level. I preferred the chicken over the carnitas but they were both so so good. I can't wait until the restaurant is finished and we can actually sit down and eat a proper meal! Next time, I'd make sure to ask for extra hot sauce and some napkins. He took the time to talk with us and made me an origomi heart with flower petals and a diamond. My husband has cancer so every day is a struggle. He left there with a smile and a new friend.
