Only great food deserves to be near great beer. And that is what happened. We were early for Foundation's Epiphany release on Wednesday 12.21. We saw the truck and the words Taco and Seoul immediately caught our attention. So very intrigued. As we patiently were waiting for the doors to open, we couldn't resist the aromas coming from the food truck. So we walked over shortly while we waited for the doors to open. In looking over the menus....we see what they did. The Korean flavors infused into Mexican dishes....wow Two of my top favorite cuisines. My husband and I decided to try 3 so "Feed Your Seoul Trio - Choose any 3 tacos for $9" Best choice to get us hooked on their food. See the picture of the menu I uploaded for more details on our food we ate. Beef taco...nope - Beef BULGOGI taco Pork taco....nope - Spicy Daeji Pork Bulgogi Chicken taco....nope - Crispy sweet and sour chicken The food was ready in under 10 minutes and so fresh and so delicious. The portions were HUGE! Check out my pic. The plate was heavy!! The good news is there were barrels by the Foundation entrance that we could use at tables. The owner, knowing we were about to share proactively offered us a second plate and pointed out the convenience of the napkins and forks. GREAT customer service. The next time we find them...and we WILL FIND YOU SEOUL TACO...mwahahaha, we are going to try the Seoul Burrito and Bibimbap Burrito or one of the bowls...or all of the above... I highly recommend you find this food truck if you like Mexican and Korean food.

It seems like this truck is popular with breweries. And for good reason! We ate here at Allagash. Their bulgogi taco is fantastic, and worth the money. I wish we had more to eat but we didn't want to fill up. The flavors are so spot on, and having a Korean taco isn't exactly something I do every day, so that was fun! Typically I'm apprehensive about fusion food like this, but they really nail it.

What can I say, these are the best Fusion Tacos around never disappoints. Bulgogi beef tacos are in this pic along with the Bibimbap Burrito that isn't pictured because I ate it so fast! So good!!!

I don't usually venture out during lunch, but I'm so glad I made it over to the Eastern Prom this week to check this truck out. My husband and I got the bibimbap AKA Seoul Bowl (beef or pork bulgogi, jasmine rice, ginger carrot, daikon radish, sesame zucchini, bean sprouts, fried egg, green onions, pickled onions, sesame seeds and a spring roll). Both the pork and beef were absolutely delicious! and the veggies! so good! It was definitely one of those lunches where I only intended to eat half, but I devoured the entire thing. It wasn't a small portion either. Totally worth the $9. Props to the crew offering more sauce -- I should have said yes!

Oh, boy, was this food delicious! Not our first Asian fusion tacos, but probably the best we've ever tasted. Great prices, fast and friendly.

I've been trying to track down this food truck for about a month now and boy am I glad I finally stumbled upon this gem. Was at the Pet Rock downtown Portland at Deering Oaks and saw multiple people walk by me with familiar looking plates of delicious tacos, and I was determined to try some myself. I ordered the trio with beef, spicy pork, and chicken... They came out beautifully and my mouth instantly began to water. My boyfriend and I downed them as quick as they came out and we were craving for more. We hoped back in line (which got super long) and ordered the Seoul Bowl with beef. One word to describe it-delicious. If you stumble upon this food truck, drop what you're doing and grab something to eat. Trust me, you won't regret it- in fact, you'll probably end up thanking me ;)

Have you ever wondered what a Korean taco would taste like? Me either, which is why I was so caught off guard when I heard of this new spot. This is a new food truck to the Portland Food scene. The menu focuses around adding Korean flavors to typical Taco Truck staples. The tacos focus on using Korean bulgogi meats to add some flare. The tacos toppings did dilute the ability to taste the bulgogi, but it still was noticeably different from a typical Taco. I'm not sure if they've found a permanent spot yet, so check their Facebook profile for location updates.

This food truck amazing. I've eaten here three times: once at the Allahash Street Fair in 2017, once at Allagash Brewery in late 2017, and most recently at Street Eats and Beats. The tacos are all so flavorful and filling. My sister and I always get three and share. I love the steak one but the chicken comes in a close second. The corn tortillas are a great touch!

At $6/taco, I would have expected either a more complex flavor profile, or a larger taco. The vibe is fun and funky, but not for me anymore. The service was good, and I really liked our server. No nonsense and prompt, and when you have a hangry 5 year old, it's greatly appreciated. Especially after changing his drink order 6 times in 30 seconds. He thoroughly enjoyed the verdue puffy taco, so it's a win for us, too! Overall, a great vibe for a younger crowd with young kids. Just not for myself as a go-to.

Turns out they are $20 before tax, holy moley. I admit that my expectations were high before I even took a bite, because that price point is a little crazy. It's packed with flavor and topped with the most delicious, salty cotija cheese that pulls everything together. I crave that dish. We split the smoked brisket tacos and the smoked pork carnitas tacos, and both were outstanding. The meat was smoky and tender, the flavors were bold without being overdone, and every bite delivered. And the margaritas? Excellent and refreshing. Exactly what you want alongside that food. On top of all that, the staff is consistently wonderful. Every single time we've gone, our waitstaff has been charming, attentive, and genuinely helpful with recommendations. They strike that perfect balance of checking in without hovering, and they make you feel welcome from start to finish. Terlingua never disappoints. You can't always get Burnt Ends but when you can it's for sure a must. We really enjoyed Terlingua and can't thank the staff enough for working with us for this event. When another server delivered our meals I asked again if it was vegetarian, and specifically whether there was lard in the refried beans. This server said that usually when there is cheese on the refried beans they are not vegetarian and would take the meal back. They returned a bit later with my meal and an apology, stating the other server was new. Sadly, now my meal was cold, like room temperature. Although I insisted they eat without me, the person I was with insisted on waiting until my meal was delivered (this always puts the other person in an awkward position), so now I suspect both meals were cold. A disappointing dinner at El Corazon. I realize mistakes are made but this is the kind of thing that makes you lose trust in a restaurant. It's so important that staff is well versed on menu ingredients, or that they check if unsure.
