    Dario is a local (even international) institution, with his love of meat -- as something to…read moreprepare, something to cook, and something (in its origins) to be respectful of. Going to Dario's is an event. We did it 15 years ago while in the area, and it was a priority to revisit when we knew we were returning this year. FOOD / DRINK: So this is a meat-fest, just to be clear. There are multiple dining areas for a single-seating lunch and dinner, seating up to 250 folk at a time. The party starts in the half-hour before seating, as glasses of chianti and lard-buttered bread are served out on the street to the folk waiting. Once you're in and seated, there's bread and oil, a huge fiasco of chianti, and multiple courses of meat (from tartar to beautifully prepped steak) leavened with potatoes and beans, etc. It's all topped off with coffee and grappa or vin santo. Everything is fairly simple but high quality and tasty. Even stuff you don't think you'll like, you likely will (I'm not a tartar guy, but it was quite good). Meat is cooked rare to medium rare, and, no, you can't ask for it cooked differently. There are also kid-sized portions, and veggie meal options. Arrive on an empty stomach. If you leave hungry, you're doing it wrong. AMBIANCE: Each of the dining areas -- two floors in the main building, the back patio, and a building across the street -- are decorated differently. Seating is at common tables, to encourage conviviality over the food (we didn't interact with our neighbors at all, but that didn't bother us). The place is pretty loud, with all the talking and service going on, but not uncomfortably so. SERVICE: The waitstaff are focused on serving out courses, one after another. They are friendly and professional and efficient, which is effective for the setting but leaves little time or inclination for socializing or chit-chat. They're there to deliver good food, you're there to eat it, that's the deal. Dario makes an appearance during "cocktails" outside, and provides pre-seating a powerful, enthusiastic announcement to the crowd, getting them to cheer for eating and meat and eating meat. He also took a swing through our (and presumably the other) dining rooms, glad-handing the venerating crowd. But save for one staff member who invoked a similar crowd cheer at the beginning of the meal in our dining room, the focus of the staff and service was in getting things served out efficiently, offering seconds and thirds as available, and keeping things moving ricky-tick. That's not a bad thing, just not as exciting a thing. NET-NET: The value here is undeniable -- great food, plentiful drink, for a remarkably low price compared to a lesser meal in Florence. The place still is an excellent place to eat lunch (followed by no dinner) or dinner (followed by sleep). That said, the last 15 years have sanded down the sharp, wild edges of the experience, turning it more into "just" a great meal than a bacchanal of carnivorism. Darrio has slowed down (as have we all) and seems more focused on the butcher shop; the staff and deputy leadership are keeping things going efficiently and well, but without the same wild-and-crazy, burning passion of a decade-and-a-half ago. Again, that criticism doesn't mean you shouldn't go. It just means it's a bit more conventional a meal -- despite its dimensions -- than it once was. If we are back in Florence in another 15 years, I'll definitely be back.

Sitting at a long family table we enjoyed meeting people from Ukraine, Spain, Brazil, Italy and the United States as we indulged in a carnivore's feast led by Dario, the patron of our new-found family. We toasted and laughed and leaned and celebrated together like blood relatives catching up after not seeing each other for a long, long time. What a fabulous culturally-bonding, life experience as we seized the day and enjoyed our new-found family brought together by Dario! Carnivore Diem and Carpe Diem!

For app I had the anchovies with roasted red pepper, sea salt and oil over grilled crostini, very good. I skipped first course and ordered the ribeye steak for my main course. Bone in, medium rare, sprinkled with sea salt and a side of onion marmalade. The steak was very good and had way less fat than I expected. The waiter suggested a huge steak for the table, but I was the only one ordering steak that night. Maybe next time. Others ordered the fillet and it was cooked perfectly, the angels and demons gnocchi, and the veal scallopini. We all thoroughly enjoyed our meal, and it was definitely the best wine we had with meals in Florence. Gnocchi and wild boar taglietelle were outstanding. Had we had come earlier in our stay we might have come back again They also do a wine window which I wish I'd known about earlier because the other one we tried for fun was not good

We asked for the steak to be cook medium well with only a little bit of pink. Unfortunately, it came out bloody and raw. We had to send it back to be cooked again. The fries and steak needed a lot of salt. Once the steak came out again, it was still pinker than we liked, but we tried to eat it. It was really fatty and rubbery. It wasn't because it was cooked that way. Our friends ordered steak and they like it rare. They said their steak was rubbery too. The service was also lacking. The server disappeared and never checked back with us on the food. Then, they tried to overcharge us by $40. I pointed out the error and they only partially fixed it. I had to have them correct it again. There was no apology for their error or food. We were disappointed with the quality, service and price. The next day we went to another steak place we saw two doors away from that place. It was called La Cantinetta Osteria con Cucina. It wasn't busy or fancy, but the food and service was amazing. I highly recommend them to anyone looking for a real steak with good service. I would go there in a heartbeat if I am ever in Firenze again.

We ordered the carpaccio chianina, grilled ember vegetables, and their daily special, an Argentinian beef (10 year old dairy cow that had been aged 60+ days). We asked if we should order any toppings or sauces, and the answer was no - neither was needed (as the flavor of the steak should stand out on its own). I appreciate that. Unfortunately, they ran out of the carpaccio chianina, so the owner comped us a chianina tartar so we could try the infamous chianina. Very tender yet robust flavor, especially with the salt. The steak (medium rare), cooked perfectly and very tender, but I can't say it was amaze-balls. Also, both this and the chianina only came in rib eye (not full T-bone), but that meant we could order 1 kg instead of the 1.2 kg minimum. That was good since between the two of us, we could not even polish off the 1 kg. The grilled ember vegetables were delicious! Too bad there just weren't that many of them. The owner apologized and told us they were on the house, since his shipment did not come in due to the holiday on Monday. We are from out of town, so honestly we wouldn't have know the difference if that was a normal or sparse portion. That was nice of him. Service was A+. Attentive, knowledgeable and so hospitable. Reservations are a must! This is a small restaurant and many parties were turned away during the duration of our meal there only.

But I digress. First off the place has started out as a butcher shop and has been "Antica Macelleria Cecchini" for 8 generations. The restaurant is just a latest addition to the mix. The shop is across the street where Dario meets the guests and they can have bread with Lardo. Then you can go into the restaurant where they have a wood fire oven/grille/bbq where the meat is cooked. We were there pretty early so we got an early view of the prep that goes into the experience. The tables are set up with bread, lardo, cut vegetables (celery, radishes, carrots, etc), and a 2 liter bottle of Chianti Classico (so if you're not driving drink to your heart's content). There are 2 times you can have a table. We chose 8pm and once all the guests have arrived we're off to the races. Basically you have Chianina meats served starting with Tartare, Entrecote, etc ending with Bistecca Alla Fiorentina! So pace yourself. It is a lot of food.
