Stopped today at Cal Wise Spirits. Haven't been there in a while. I was a member when I first started going there. I love the drinks, food, atmosphere and the owner. It's been a while but Arron is still there making his wonderful spirits and finely crafted cocktails. We went to lunch across the alley from Cal Wise at Primal House for lunch. After that we decided a cocktail would be great. Arron took care of us. Cal Wise still serve the best quality cocktail in the county. It was a great afternoon and we'll do it again. Cal Wise and Primal House are so close that Primal House will send anything on their menu across the alley for you to enjoy at Cal Wise. You just can't beat the experience. This is our second time visiting this distillery! This place is a nice change from wine tasting! Nestled in an industrial area by tin city, you will find this small distillery! The distillery provides flights and cocktails! There is a good selection to choose from! Most people stopping in did sampling of their products! This is a good move if this is your first time or it's been awhile since you have stopped in! The items do rotate from time to time! We just grabbed a couple of holiday drinks! I started with a spice run drink: similar to a hot toddy! Almost a hot toddy coffee! Very good flavor: the drink went down too easily! We also had a couple of gin a tonics! I had a cranberry version for the holidays! Before leaving you can take items to go! They sell a bottle for 29 dollars that consist of a ready made cocktail! You can also buy there distilled items! We had some time to burn before a dinner reservation at a local restaurant so decided to try a visit to this distillery. Here you can do a tasting, get flights (like I did of 3 gin & tonic versions) or buy a craft cocktail & food...I believe the cocktails + food are only available Fri-Sat-Sun though. Service was friendly and very informative. Though I ordered a flight, I was allowed to taste a few things--which was helpful and aided in me taking home a bottle of bourbon whiskey and an infused rum. They do offer a loyalty club (like a wine club), with deliveries twice or four times per year. Their shipments include a flavored syrup and cocktail recipes to accompany the chosen liquors, which can be swapped out for personal preferences. The environment is inviting and spacious, but the location is a little off the beaten path (it sits off to the side of Tin city proper). It is worth a visit though and I suspect Tin City will expand and absorb this neighboring area. read more

We stopped by after a weekend of wine tasting and enjoyed the change of pace. There are several options here. You can taste a selection of their spirits, have a crafted cocktail, or enjoy a gin and tonic tasting. What fun! We did a bit of all three. I liked the pineapple rum used in my Pineapple Queen cocktail and bought a bottle. They kindly shared the recipe. Others in our group had fun with the gin and tonic tastings and sampling their spirits. They have several seats at their bar as well as table seating. This place can be a bit tricky to find, even with the GPS. It's located in an industrial warehouse complex, along with other breweries and businesses. I drove here from Orange County to pickup hand santizers to add to my collection of "boozy sanitizers" from American distilleries. I walked out with that, plus an Old Fashioned cocktail to go. The interior is fun, and the staff was very friendly. I'd come back once this pandemic settles down. Worth the drive from the OC. read more

Visited Calwise a year ago and can't get enough of this place. The service is so friendly and knowledgeable. Leo's cocktail creations are out of this world delicious. The tasting room has an amazing vibe and is dog friendly. During a wine tour our driver suggested we end our tasting trip at a local distillery to sample some whiskey, bourbon. Off we went to Calwise Spirits. A large table was set up for our party of ten with menus readily available. The server introduced himself to our group and briefly described how tasting worked. Most of us decided on the tasting flight, two sampled the gin flight, and one choose the prepared old fashioned. Perhaps, the server felt overwhelmed as he was the only worker, but his attitude left a bad taste in our mouths. Which is unfortunate, as the Axe Hole, single malt whiskey was actually pretty good, the best of my flight. The old fashioned was a tad too sweet for my taste, but others raved over the smoothness At times the server provided some background on how the spirits were made, but he appeared bothered and tired when working with our table. He mentioned his relief that only two people order the gin flight ("oh thank goodness only two of you ordered the gin...it's so much work"). Several of us ordered the limoncello as part of our flight, but they were out of the liquor. To which I replied, "oh, that's too bad I really wanted to taste that." The server said, "I'm not sorry" w/an eye roll. Honestly, I was shocked over his rude response. It was unnecessary. I mentioned to him that his response was rude and he wasn't working well for his tips. He further added that he's "...entitled to my opinion." I'm not one who believes 'the customer is always right' school of thought. Sometimes customers can be rude. But this was uncalled behavior by the server. He could have handled the response differently. First by mentioning when we ordered that 1) they're out of the limoncello, 2) apologize for not having it and make another suggestion, or 3) explain that they worked really hard to sell out of the limoncello and finally reached their goal, and then make another suggestion. But no, he decided to have a nasty attitude and provide our large group with poor customer service. Our group tips freely and generously, but we are also entitled to our opinions. We decided his curt and poor service was lacking and sadly this server missed out of our generosity. We walked away with no desire of returning to Calwise. read more

I attended a Yelp event here last night and I enjoyed it so much I brought my friend, who likes gin, with me. We each had cocktails, split an appetizer and split a flatbread. Everything was delicious. The cocktails were not over powering and strong... just enough and they were easy to enjoy. The food was not made on site but it is made locally and brought it. My only request is to offer tables with lower chairs, unless you really don't want people to linger. I found myself getting uncomfortable and fidgety on the tall tables with the stools. I know you guys just opened so it is just an idea for down the road. I would like to be able to just chill with a cocktail and apps. ... us older folks need some back support We will definitely be back! read more

What a unique discovery here on the Central Coast. My husband and I attended a Yelp event here on Thursday night and were delighted to partake of the spirits distilled here in San Luis Obispo county. I liked Aaron's story on his website, and can identify with his scofflaw tendencies, since I found out that I could ferment Apple Juice in the bottom drawer of my desk in high school. (Maybe add an Apple Jack beverage.) The use of herbs and local ingredients to spice and flavor the alcohol was enlightening. Their beverages are all based on flavors that are local and natural. The distillery is beautiful and new, with a trendy cement floor. We really enjoyed the mini-California Mule that was made with their Spiced Rum, Ginger Beer (my latest flavor crave) and lime juice. It tasted light and refreshing, and there was no kick in the head later! We chatted with other Yelpers, and really enjoyed the small bites, which were catered for the event, but which are available on the Tapas Menu. The bacon wrapped dates and red peppers stuffed with goat cheese matched up with the drinks to perfection. There are two other venues in this small industrial building on Ramada Road in Paso Robles, and they make this a destination I look forward to visiting again soon. read more

I can't say that I've tried the food here, but their cocktails are creative, and the spirits are top-rate. Service is great too-- their staff is very nice. I'm not usually a liquor person, but have popped by here to taste on a couple of occasions. Their gin is fabulous, and the blonde rum is heavenly-- tons of vanilla on it without any weird, chemical artificial notes (believe this is because it's aged in chardonnay barrels, if I remember correctly). Their spiced rum is also lovely-- lot of orange peel on it, which is nice. My newest discovery: the "Grandpa's Coffee" rum. This is distilled with molasses, and then steeped with Spearhead coffee-- and it is, hands down, the most delicious spirit that I have ever tasted. It's rich, so I could easily savor a thimble of this and be totally happy. 5 star review just for this one product! read more

The tasting room is cozy and modern. There are two tasting menus - four cocktail tastings for $10 and six spirits tasting for $15. The cocktails were well-balanced and highlighted the spirit. The spirits flight included gin, rum, whiskey, orange liqueur, and vermouth, all of which were smooth. Big Sur gin is herbaceous and one of their most popular spirit. Our tasting fees were waived off because we bought two bottles of 750 ml spirit. read more

We had a bbq chicken flatbread that was good but not great. I really wish this place had a patio, however the interior is super cute and welcoming. Our server was really kind and patient. This place screams "California". Great decor, unreal cocktails and a beautiful array of spirits. The Spiced Rum and the orange liqueur were my favorite. Can't say enough great things about Calwise. Ray and I accidentally came across this distillery on one of our wine tasting adventures. The venue is beautiful with gorgeous decor and high ceilings. We also learned it's currently the only distillery between San Diego and Portland that has a bar on site. They also have food available for purchase! The best part of our visit was meeting Aaron and Rebecca!! Aaron was our age and honestly, it was inspiring to see someone so young with his own business. Rebecca is super fun to talk to and we had a great time talking about parties, life on the central coast, and their bear costume's teeth. Yes, there is a cool bear costume hanging on the wall for your entertainment/photo pleasures. After you've had a cocktail or a tasting I highly recommend running around in it.
