What Mexican restaurant charges for hot sauce? Ii ordered it and it was small cup for the price. Need to watch the menu. Nothing includes rice and beans REALLY that is an extra charge. Don't ask for boracho beans. Very load. Made an order to eat here plus a to go order guess what they got it right, that's the only thing I can say good about this place. Food is over priced, load place, waited for a small table since it was only me but there were tables that could seat 4, took a while to get order almost walked out before food came to table. Stayed locally for one night and asked the hotel for a recommendation. They said Carlos Restaurant had great Mexican food and the queso in particular was amazing. Sold. When you pull into the parking lot, the building doesn't look like much but the inside is cozy if simple. There's no drink menu, and the bar offerings are mostly beer and mixed very sweet cocktails (Blue Hawaiian, etc). Chips and salsa came out immediately, and the salsa was closer to pico de gallo than actual salsa. Hardly any heat to it. We ordered the queso to try and it was basically microwaved Velveeta. I have friends from the Midland area who make homemade queso that is worlds better than what was served. I got the carlos sampler which included a chile relleno (passable but not too flavorful), a cheese enchilada (passable), refried beans (pasty and like they were from a can), Mexican rice (bland), a beef empañada (bland) and a large tortilla chip with guacamole on it that tasted exactly like packaged Holy Guacamole and was clearly not fresh. Anything with cheese on top of it looked like bright yellow melted shredded cheddar. The server was really nice and attentive, and the prices were great, but the food was really lacking and disappointing. I've read other reviews that mention that management of the restaurant has recently changed hands within the family and the quality has gone downhill. If that's true, I hope they turn it around, because reviews from a year ago are vastly different from within the last six months. read more

After deciding to stay overnight in Big Spring, I decided to dine in at Carlos despite some of the reviews I read. The restaurant appeared to be clean with friendly staff on duty. I was greeted upon entry and decided to sit at the bar since it was just myself. They had a vast array of selections on the menu, narrowing my choice to the combo fajita's for one. Food was delivered in a timely manner with plenty to eat on the plate. The fajita's were very good, flavor and juicy... Came with all the fixings and a couple of tortillas, which were also good. All in all, I was impressed and would make another stop by Carlos' Mexican food. Prices were competitive as any Mexican restaurant that I've been to across the nation. Spoke to one of the owners who said they had some plans for expansion and improvement in 2016. I hope they move forward with the plans! read more

After a great weekend at the Settles, I was looking around for a good Tex-Mex meal for the road on a Sunday afternoon. After finding a few places closed, I stumbled upon Carlos' restaurant. Holy moly!!! I ordered the fajita nachos with mixed meat (beef and chicken). It was awesome!!! My guest and I agreed that the food and the service was far above what we were expecting!! Indeed, we will make another trip to stay in the Settles, but we will also make plans to eat at Carlos' as well!! Please, let this place be a part of any visit to Big Spring! This is the second time I've come to Carlos. I absolutely enjoy the heck out of it! Their meat is well spiced and tender, the portions are crazy, and the wait staff was extremely attentive despite the very loud atmosphere. We were heading west on the interstate when it started to get dark so we pulled off for the night. Big Spring itself is not a place to write home about and most of the restaurants did not do much to dispel the feeling. After stopping at a couple that were closed, we came upon Carlos Restaurant & Bar. Looked a bit sketchy from the outside, like you should come out and check your car every few minutes. Inside was a different world. Interior is made up of several good sized rooms with tasteful modern wall hangings with a very cozy feeling in each room. Good bar with flat screen close to the entrance. Noise was a little high but the place was packed. Prices were quite reasonable. Service was friendly and good considering the crowd. My chicken fajitas were good and my wife's green enchiladas were also good. Tasty margaritas and good chips. We had been on the road for 3 weeks and while we did have a couple of Mexican restaurants that were better, Carlos is much better than average and with a very pleasant interior, is hard to beat if you are in Big Spring, Texas and a step above the average Mexican restaurant anywhere. read more

I really like the food here. When we moved away and would come to town for the holidays and make sure we stopped to eat before leaving. The owners go out of there way to try and make sure everyone has a good experience. I just returned there the other night and food and atmosphere was great as it always had been. Now the waitress obsolete. The person who brings the chips and salsa took are drink and appetizers order and kept checking on us for the first 20min before we realized she wasn't are server. Then finally the person that was are server took the order. Then didn't see her again. I had to find someone else to pay are bill. I guess when you wear summer sandals to work you don't plan on working to hard. Will be back just not in her section. read more

Drove by last week on our way across Texas - saw a ton of cars at this restaurant, so we decided to stop there today on our return trip. The cheese enchiladas were some of the best we have ever had, just the right seasonings. And the medium order of nachos were a LARGE hit, delicious cheese and fajita meat with perfect guacamole. The food was terrible, Seemed as if it had been sitting under a heat lamp for hours, beans were crusty, rice soggy and the quesadilla was something you could buy at Taco Bell. The service was acceptable seem like people were buying alcoholic drinks I don't drink. read more

Well it has a good atmosphere but very noisey--not a place really for a family in my opinion. The waitress who is the regular there was snaughty and rude when I asked if I could substitute dark chicken meat for white to have in my tacos. She rudely told me "NO I could not" They do not have shredded beef tacos either. All of your meals are made with ground beef and dark chicken meat in their dishes. The only thing I saw with shredded beef in it was the taquitos / flautas on the menu. I think personally that's being cheap on their part. Not everyone wants ground beef in their burritos or dark chicken meat. Most people these days want/ prefer white chicken meat in their food. The chips and salsa were pretty good but too hot for my taste buds ! The plates look amazing though, I"ll give them credit for that. Just very disappointing in the selection and how the waitress treated me with her attitude turned me off, TO NOT wanting to eat there COMPLETELY...tried going there a second time and the same thing again. I had a rough week. Last night I went to Carlos' to have a couple margaritas and unwind a little bit with a friend. For the most part I had a pleasant experience. They've changed the décor, the food was okay, they got their liquor license and now offer a plethora of cocktails and other alcoholic beverages. I ordered the margarita swirls. They were excellent, and then the bill came. On they menu they had them priced at $4.50 on my bill they had them priced at $5.50. So I called the manager over and he gave me a variety of excuses of why I should pay the $5.50. This got me upset. I didn't care why he thought I should pay full price when the menu clearly said $4.50. I told him that this was his mistake and not mine and I shouldn't be penalized for it and it was false advertisement. He then began to get ugly with me and tell me that I was not a valued customer and my business wasn't wanted there anymore. Then he went to the phone and called the police on me as if I were refusing to pay my bill. I never once said I wouldn't pay my bill! I paid my bill and left as police were coming in. I was highly insulted and it ruined my night. I will NEVER go back to Carlos' and just wanted to tell everyone of my experience, and let y'all know this is how they treat their customers and run their business. RIDICULOUS!!! read more
