Dining at Mesón de Cándido is much more than simply having a meal--it is part of the Segovia experience. Located directly beside the magnificent Roman Aqueduct, the setting could hardly be more spectacular. Even more impressive is the restaurant's history: Mesón de Cándido has been welcoming guests since 1786, making it a true institution in Segovia.
The restaurant has an incredible sense of history and tradition. From the moment you walk in, you feel that you are experiencing a place that has been an important part of Segovia's culinary heritage for centuries. The atmosphere is elegant, traditional, and full of character.
Of course, the star of the meal is the cochinillo asado, and it absolutely lives up to its reputation. The meat was incredibly tender and flavorful, with perfectly crisp skin. What made the experience particularly special was having the owner personally come to our table and cut the cochinillo with a plate, following the restaurant's famous tradition. It was a wonderful and memorable touch--and something that makes the meal feel like a true Segovia experience rather than simply dinner.
The service was professional, attentive, and welcoming throughout our visit. The staff added to the experience while maintaining the warm, traditional character of the restaurant.
And then there is the location. Sitting beside one of Spain's most extraordinary Roman monuments while enjoying traditional Castilian cuisine is difficult to beat.
Mesón de Cándido is certainly a restaurant with a legendary reputation, but after experiencing it firsthand, I can understand why it has remained such an iconic destination for so many years. If you are visiting Segovia, especially for the first time, I highly recommend making a reservation and experiencing it for yourself.
