When I had previously heard about baleadas, it was primarily in the context of the sencilla (simple) variety - traditionally had for breakfast and filled with just cheese and beans, almost like a pupusa with lighter dough. Here, I tried what I assume to be a more updated take on the dish, filled to a voluminous extent with avocado, plantain, and a protein of your choice (cauliflower for me).
