This shop itself is actually quite roomy and is located right off of Highway 85, which makes it a good grab and go spot. It's also located at a surprisingly roomy gas station lot with a large convenience store, which gave me Final Fantasy jrpg vibes (the initiated will understand).

The pork shank was braised beautifully and fall off the bone tender. The mole sauce was flavorful and not overly sweet. The portion was also huge. The meal came with bread accompanied with 2 types of butter regular and a coco infused butter. Both had salt on the side which added a bit of flare to it.
