In fact, my favorite part of the meal was the jerky served in the beginning of the meal. It was delicious! We went to La Bête just to buy more of it in the following years. This time, I opted to drop by their butcher shop to buy some special cuts for Father's Day. I was not alone with that idea, as a lineup had formed at their entrance. Most clients were there to pick up a few items from their butcher shop, with the kids eyeing the live lobsters at the entrance with amusement. I went for the Tomahawk AAA, the Porterhouse AAA, the Kansas AAA and to finish in style, the "Cowboy" wagyu. You can probably guess which one cost the most!. Service was very courteous and speedy despite how busy the shop was. My order took a bit longer than that of others, as many had ordered online beforehand and only needed to pick up their reserved bags. I took my precious package home and proceeded to patiently let the cuts warm up before prepping them with salt and pepper. I won't go into details of the cooking, but it was definitely an exciting experience to manage these impressive and different cuts (we aimed for rare to medium rare). The steaks were delicious! The porterhouse was particularly tender, second only to the wagyu, which was distinguished from the other cuts by its rich umami flavour.
