Pat Romero is too rude and doesn't do a good enough job to tolerate any longer. I'd given him our…read moreknives to sharpen twice before, not because he does a great job but because of the convenience. He's always been unpleasant (about where you stand, how you approach him, interrupting him, when to return, etc.) but his rudeness today (letting me wait at his set up but refusing to get out of his car because I arrived early, finally screaming to come back other day) was the final straw. I won't return and I won't miss the job he does. First, he sharpens knives so sharp that they cannot maintain their edge. A knife needs to be sharp enough to do its job easily but thick enough to maintain its edge. He over sharpens. Second, he'll ruin the patina on a quality knife by grinding well beyond the edge. Pat Romero is not worth his convenience.

But that's not even the important part. Phil was crazy fast and beyond reasonably priced (I honestly felt a little like I was stealing from him, tbh, but since he sets his own prices and I will definitely be using him again, I guess it all works out), but that's STILL not the important part. The most important reason to go to Phil is the incredible KINDNESS I experienced. The importance of simple human kindness must never be underestimated.
