    New Mexico is known for its chiles, so why not take a trip out to the Chile Pepper Institute to see…read morewhere it all began. I learned so much about the chile peppers from our docent who also runs the gift shop. I cannot even begin to go into the learnings and facts from the Institute. Since the Institute is connected to New Mexico State University, it is clear that academics, scientific findings, and research go into every part of growing the perfect pepper. Highly recommend going here just to get yourself orientated with the chile pepper. You'll come away knowing so much more about the process and types of chile peppers. You can also sample some hot sauces while here as well as purchase your own chile pepper seeds. You can also get a pack of mystery seeds at no cost and see what grows out of the pack - maybe you'll get a NuMex Big Jim (medium heat) or maybe you'll get a NuMex Sandia Select(hot strain)- who knows, and that's what makes it fun. Highly recommend adding this to your itinerary when in Las Cruces. The more you know!

The institute was founded in 1992, but NMSU is the place where Dr. Fabián García began standardizing chile pepper varieties in 1888. Peppers such as Anaheim, Pueblo, and Carolina Ghost all derive from his pepper seeds. Chile pepper research is still conducted at the research center & gardens, where over 150 varieties of chile peppers grow. We got a couple of colorful dwarf ornamental chile pepper plants to try out our green thumbs for only $8, and a multitude of seed packets can also be purchased. We also got to sample some of the hot sauces from Karma Sauce as featured on the show, "Hot Ones".
