I decided I was going to walk around the village to see if there were an airBnb . I saw that amazing place Le Patio des Senteurs, and called immediately. The owner, Sylviane answered and told me that they were closed but they will open the place for me! Sylviane and Pierrot her husband were in another city, they came back to meet me, help me with my luggage and spoiled me with delicious local cookies! The house is just like a picture from the World of Interiors When Sylviane and Pierrot came back in the evening, they invited to have dinner with them. The next morning the breakfast was delightful and the hosts incredibly helpful and kind. I am so glad I had no power! My stay at Patio des Senteurs was the highlight of my extraordinary trip! Merci Sylviane et Pierrot. Ill be back soon!

Did not at all expect a technically proficient explanation of the process of making blanquette de…read morelimoux, which if you didn't know, is actually the first sparkling wine ever made (more than 100 years before they were making it in the Champagne region). Excellent prices at the cellar door whether you go on the tour or not, but the tour does come with tastings at the end, a lot of knowledge and hands-on demonstration of the traditional method that Guinot uses. Our room was very very very clean and the decor was crazy superb with elegance. I studied interior decorating and I was mesmerized by its traditional European French decor. It's actually better than the photographs on the owner's web site. The service was excellent. The owner's name is monsieur MAZET Bernard. He is very nice and very hospitable. He is very personable . He picked us up from the train station as a one time complimentary service. Then later he was kind enough to drop us back to the train station on our way to Paris. OMG, I was speechless. Carcassonne do not have taxis, as far as I know. I thought I was going to walk for a very long time with my huge luggage to the train station. It makes me want to go back and stay again at his place next time I go to Carcassone. I would recommend you this place. You will not believe it. Just to let you know in advance though... he only takes cash only in EUROS! Most people get surprised by it. But over all, everything is all excellent!!! Good breakfast. All fresh.

The place is a little worn, but you can feel the history in it. It just feels magical. It's a bed and breakfast, but feels like a cozy mini hotel. The proprietors were incredibly friendly and helpful. We asked where we could go hiking, and they directed us to a beautiful spot. Despite my not knowing more than three words in French, they put in the effort to understand me and make sure that I had a delightful visit to Axes-Les-Thermes. The included breakfast was fantastic, with an array of pastries, meats, fruit, eggs, etc... We're here in April. There's still a little snow up above us, and Spring wildflowers emerging. It is just beautiful.

I had never seen this dessert wine before and then suddenly within the same month I've tried it…read moretwice. First at Manresa, then at Cyrus, two very fine dining establishments. Now this is a fortified grenache which takes some getting used to initially as it packs quite a punch. A dark plum/purple hue as it sits in the glass and as you sip it, it has a thick/sweet/herb/smoke flavor to it. Very complex as wine goes and I'm not sure how I'd exactly pair it, but it's interesting enough to go on it's own. The price tag maybe a hinderance to some but it's definitely worth trying if you're into non traditional wines out there. 4.25 stars
