Rooms are amazing, upgrade to stay in the big house. Our room had a shower which leaked onto the bathroom floor every time we showered. This was solved by bringing new towels every single time we had a shower. Lots of cats around the beautiful castle. If you tip Marcel who's worked here for 22 years well he might give you a tour down the old catacombs which also acted as a nightclub in the -70s. The garden is amazing and everywhere you hear birds chirping, winds blowing through the trees or water pouring from the "bains thermales". There are two pools, one big by the garden and one on the top floor which I think is a little heated and has an beautiful view of the surroundings. The booked a table for us when we arrived in the small restaurant 5 min away, but it was closed. To compensate the owner served us free cocktails. And since it was our honeymoon they had a complementary bottle of champagne in our room upon our arrival. In the evening they close the shutters and ready your bed. At breakfast they have fresh carrot, mint, mango smoothie. Will definitely come here again.

I rented their guest house for a week last summer and very much enjoyed all of it's benefits. Plus it's close to the Medditeranean sea, to some historical castles of the Middle Ages and lots of moutain sports activities like canoe, rafting, hiking, rock climbing. Only problem, the night life in Limoux isn't the most exciting so go with family or with a big group to self entertain yourselves. If I ever go back to southwestern france, i'll go back there for sure!

Like in old novels, behind a door on a cobbled street, is a hotel and a tavern for any lost soul that happened to be here. In fact, it seems the place is very popular - during our short 20 minute conversation with Anne, who I assumed was the owner, she answered two phone calls asking for reservations months in advance. I take it we were here in a low season and thus managed to book it mid-afternoon the same day. Upon booking, we immediately got a call back from Anne, asking whether we would like to have a dinner and confirming the arrival time. This place is simple, old and uniquely charming, with a personal touch on everything you may see. It is a perfect mix of all things old with a modern twist. Impeccably remodeled rooms (ours was hidden high under the roof) with low ceilings and a fireplace, but all modern amenities - brand new windows, showers, heating units. A spacious green terrace on the hill hugging the building that you would never know is there looking just from the street- with lounge chairs and dinning tables. An old bar with 4-5 wooden tables, serving locally brewed beer. A small counter offering local specialties - jams, preserves, honey, soap. A bright breakfast room with everything your heart desires, including a Nespresso machine, for the addict in you. Tiny details here and there that are so well put in place. I don't know how this family does it and I was astonished how well the place is run. Anne seemed to have a small team of maybe 2 or 3 people that prepared a delicious dinner for a dozen or so guests. Talk about local ingredients - I bet it all has been sourced from the nearby hills. Food was delicious and worthy of any high end Parisian spot. Rooms were spotless clean. Common areas smartly designed and cozy. Breakfast room was ready at 8 am to serve any guests who wanted to leave early. Rooms were quiet and you could get a feeling you are the only one in the whole house. All in all during our 10 day road trip in France this was the best place we stayed at. I am so happy we found it online, as this is one of those nights the memories of which will last forever.

Arriving at the spur of the moment in Ales we found the hostellerie and ended up in the restaurant…read morewhere I had a goat cheese salad and trout with pine nuts and the obligatory two "boules" of sorbet and hubby had foie gras, followed by trout "meunière ". All was extremely well prepared and the plates with the trouts were not only wonderfully cooked but also a delight for the eyes - to mention purple slices of potatoes, golden trout, greenish black sheered fennel and butter seasoned to perfection. If ever you have a chance to go there it is well worth a side trip from Limoux.
