I didn't get a chance to ask who roasts their coffee, but the light roast was impressively smooth, almost tea-like, with none of the bitterness you'd expect. I also ordered a mocha latte and loved that they make their syrups in-house--the freshness really comes through, a welcome change from the usual plastic-bottle pumps.
