Ever since trying some amazing ones in California and Florida, we've been on the lookout for something that hits that same note--and we may have found a solid contender. Out of the many food trucks selling empanadas, The Rican Lab stood out. Their empanadas didn't disappoint. The crust was just right--crispy, not greasy, and not overly doughy. I didn't get any of that lingering cooking oil taste, which is a huge plus. I went with the beef empanada, while my husband tried the buffalo chicken. The beef had good flavor, but it could have used a binding agent--maybe cheese or sauce--to hold everything together. It felt a bit loose, so I imagine the beef and cheese version would have had better structure. I also think using shredded or chunked beef might work better than ground beef for a more satisfying texture. The buffalo chicken empanada was the real winner--well-seasoned with just the right kick. Neither empanada was dry or overly saucy, but both could benefit from a solid dipping sauce to round them out. We also grabbed a cherry lemonade, which was wonderfully refreshing. It hit a perfect balance--not too sour, not too sweet, and just tart enough. Bonus points for the generous serving size--it definitely felt worth the price. Beyond the food, the event itself was an amazing experience. There were food trucks representing a variety of cultures--Laotian, Filipino, Greek, and more. The diversity of choices was exciting. On top of that, local performers added to the festive atmosphere with live music and dancing. All in all, the Raleigh' Annual International Food Truck Festival is a must-visit. If you're on the hunt for good eats and good vibes, this is the place to be. We're already looking forward to our next visit--and the next round of empanadas.

I had the brisket sandwich with fried and that did not disappoint as well. Brisket was super tender and not super fatty. Topped with some pickle, onions, and bbq which it made it perfect. I had the Brisket Sandwich with sidewinder fries while my dining companion chose the French Pig with green beans. The brisket really stood out above everything else on our meals. It was very tender and super flavorful with a perfect amount of bark. It was arguably the best brisket I've had in this area, with the possible exception of the Redneck BBQ Lab in Benson on a good day. The sauce was tasty, however the brisket stood on its own so it wasn't really needed. Sidewinder fries aren't incredibly common so they made for a nice change of pace in the realm of fried-potatoes. My dining companion thought the French Pig was very good and commented on the enormous serving; it had to have close to a pound of pulled pork. I got to try the pulled pork and while it was very good, it was just a tad dry to me. She thought the green beans were very good too. Judged solely by the food, Truman's earns a strong 4-star review. However, I thought the service was outstanding and deserves recognition of the fifth star. Truman, the owner, stopped by twice to check on us and proactively adjusted a fan to make sure we were comfortable on the patio. When we sat outside, I was a bit worried that we would be ignored, but that was not the case at all. Our server was polite, helpful, and extremely attentive. We ended up sitting outside because the restaurant was absolutely packed inside. I understand why.

When she called my order number, I asked if it was a beef dog and she said no. I said I'm sorry don't eat pork and your menu doesn't mention it either. This lady looked at me and said Oh.. and went to the next customer. No apology or refund offering of anything else on the menu. I didn't eat lunch that day. The hotdogs are fine, some of the toppings are generous but are just about right for the size of the hot dog and bun. The cheese fries have the classic glow-in-the-dark cheese of convenience store nachos, but they are served hot. Because I came across this food truck at a brewery, it just right for the atmosphere and as an accompaniment. I can't say I'd actively seek it out again, but I wouldn't avoid it, either. I need to try some of the wings just to say I've experienced the buffalo-wings from a food truck promoting its Buffalo connection.
