This is THE BEST bakery I think I have ever been blessed to taste. They pop off so hard they were selling out of stuff just a couple hours after opening. Everything we tried was perfection... I recommend buying one of EVERYTHING. Our group of 8 ate like 4 trays of various treats before we made it back to the river. Also, they have complimentary coffee too!!! Lovely people, both customers and employees. Wonderful fluffy ('melt in your mouth' finds its definition here) baked goodness. Took a carrot cake home... perfection. Have been searching for a smooth cake like this for years! Childhood memories, fulfilled. I've been to eagle bakery several times. The staff is great, but the food is nothing to write home about. Every item tastes as if the cheapest of ingredients are used. The crisco used throughout their menu coats your tongue and arteries. I won't be back. Sorry, just not into poor quality pastries. They're the best in madras because there are no others. read more

I have tried to stop here so many times. So many years of trying to stop but can't seem to get my timing down. Since 2012. First off they are the nicest people you will meet. So so nice! I came fifteen minutes after closing and was just about to leave but they had people leaving and let me in. Which was super nice of them. I've been trying to stop for seven years on my trip between my home and going to Bend. Which is often. We tried their cinnamon rolls (Amazing). My father and my in laws loved the carrot cake. I got it Saturday and cut into it on Monday afternoon and it was so moist still. My dad just loved it. It's not super sweet, which is good. Also they tried the pecan maple roll and that was really good, just like the cinnamon rolls. They got spoiled. I don't think you can go wrong with anything here. Everything is homemade and just made with love. You can literally taste it. Lol Next time I need to get there to see what they actually have because they probably sell out fast. It's just that good. We returned to Eagle Bakery a year after our first visit (and dreaming about the cinnamon rolls for 379 nights)...and were just as thrilled the second time!! The new location is wonderful, and clearly a treasured community gathering spot for lots of friendly people. It was so nice to reconnect with Kelvin, who made our last visit so positive! We had clam chowder this time and it was fantastic! We stocked up on our favorite cinnamon rolls (4 trays, we'll freeze 3 of them), the Italian sandwich rolls, pumpkin cake, carrot cake, lemon bars, chocolate cookies, honey, apple butter...and you get the drift. This place is amazing! We picked up extra treats for the wonderful folks working on our motorhome in Bend, so they will also get to try their local gem. A special bonus was meeting Rob, the owner, on this visit! He is so kind and graciously provided a tour of the kitchen while sharing his business strategy, vision, and mission. So worth the stop! We were heading north to start a 400 mile hike and saw they were open (only Fri / Sat) lucky for us it was Saturday. Amazing hospitality and generosity. They actually gave us one if their cinnamon rolls for free...the most delicious I've ever had, so moist yet completely done, not at all doughy. The frittata was a savory treat. I wish I wasn't such a responsible adult, because I would treat myself every Friday and Saturday. Everything here is delicious and fresh. There are so many choices. My favorite is the maple nut twist, but the cinnamon rolls are heavenly as well. Clam chowder on Friday and biscuits and gravy on Saturday. They often have free samples as well if you are having trouble deciding what to get. This is a family owned business and you can tell. I love the Eagle Bakery. It is a little hidden Jen in Madras. The shop is only open on Friday and Saturday and limited hours in the morning. With all the influx of people for the eclipse I was wondering if I was going to miss out on the cinnamon rolls. Would I be like Franklin's BBQ where people start waiting in line hours before the opening? Luckily it wasn't too bad. I was able to get a six pack of rolls. If you like fresh home baked treats like cinnamon rolls, pies, cookies, breads and cakes, look no further. On a recent visit, we were warmly greeted at the door by the owner, Roy. For the next 15 minutes, in between asking where we we from and how we had found him, Roy graciously and generously fed us an assortment of delicious samples. After about five samples, we couldn't believe how great everything tasted and how unbelievably generous Roy was being. We started laughing saying that we had to buy our treats as soon as possible before he gave us another sample. Their food is to DIE for! OMG; the Lord must be blessing their efforts (said ironically as I am Agnostic-Atheist) because their cinnamon rolls ALONE are enough to rate this a 5 out of 5 star place. The owners are friendly enough. I think they are Mennonites or something. They are planning on relocating to the ol' Mud Springs Grange Hall, I believe and this does suit them. They have tons of other baked goods as well. The people there definitely take their craft seriously and you can't argue with the results. Looking to stop for coffee and saw this place - incredibly nice owner who heated up a cinnamon roll for the four of us to try. He also had us try the whoopee pie and some fruit pies. The desserts were masterfully made! The cinnamon rolls were gooey and fluffy, the whoopee pie cream was super smooth, and the pie crust was flakey! Love this place! Their new location opened Oct 2019 and today was our first visit here. Always friendly, always yummy. The new building is amazing with all the woodwork, farm decore, and repurposed grange pieces. I had the ham and cheese roll and hubby had the biscuits and gravy and we left with baked goods-blueberry lemon loaf, honey, jam and whoopie pies. Well, all the reviews so far are right!! What an amazing place!! We went yesterday for the first time since we moved to town and had a great experience. We were treated to a warm cinnamon roll and coffee cake that were both fantastic! They had such a variety of items that we had a hard time narrowing down what to take home.
