They absolutely did not disappoint. I ordered the Chasu Pork Belly tacos, and honestly they may be the best tacos I've ever had. The pork belly is slow cooked and then pan seared, giving it a rich, savory depth with just the right amount of caramelized texture. The shredded cabbage and pickled red onions add a fresh crunch and brightness that balance the richness perfectly. Sweet pops from the seared corn salsa, along with scallions and toasted sesame seeds, add great layers of flavor. What really brings it all together is the sriracha garlic lime aioli and chasu reduction, which add just the right mix of citrus, spice, and umami. Yesterday I found myself stranded in the same parking lot where El Callejon is located with a flat tire. My husband was on his way from Medford to rescue me. Seeing that I was sitting there for some time, Ashlyn from the food truck came over and offered me a bottle of cold water which was greatly appreciated. When my husband got the tire off and we went to get it repaired, Ashlyn offered her phone number and said they would keep an eye on the car. When we got back and got ready to hit the road, Ashlyn came over with a plate of tacos because she said we'd had a rough time. I can't believe the kindness and generosity we were shown by these sweet people! And those tacos were absolutely delicious! I would recommend this food truck not only for the delicious food but to also support these wonderful, kind people. Thank you again for your generosity and I have an appointment in 2 weeks and will be stopping by to pick up lunch. read more
