It is located within St. Peter's monastery…read morein the basement next to a waterwheel which is still used to power their milling machine. The aroma of the bakeries are so strong and heavenly, you can find it just by the smell of it. They are known for their sourdough but I was told to try their brioche which was what I got. The bread was soft, pillowy, with a slight sweetness to it that's perfectly balanced with the natural flavors of wheat flour and milk. A small batch just came out when we arrived so it was warm as we devoured it. I was told there's usually a long line but maybe it was during the heat wave when we went so there were only a few people ahead of us. One interesting thing is there's a stone in front of the store which has 2 shapes of their signature breads. They actually use that to guarantee the size of the bread. Overall, although they only offer limited items, but they've perfected what they do offer. You can tell they use high quality ingredients. This is a must try when in the city.

It was located below the street level, next to St. Peter and the funicular station up to the Hohensalzburg fortress. The wonderful smell of freshly baked bread was quite strong as we got closer and really caught our attention! Out in front was a fully functional waterwheel that was the main source of power for their milling machine. All the ovens were wood fired. It's as if nothing changed over the last 700 plus years. Upon entering we saw the prep and work areas but all was quiet like they just finished baking. Definitely small batches compared to more commercial bakeries. Since we visited in the morning, we ordered their super soft and sweet brioche rolls and the cinnamon raisin buns. Our server pulled them fresh off the racks instead so they were both warm and heavenly in smells. They were delicious. We so wanted to come back again after our first visit but we just ran out of time. Will definitely be our priority during a return visit to Salzburg.
