So glad we did it has to now claim the spot of my favourite restaurant in Brighton! It is tiny, like being in someone's living room but ever so cosy I have never sat in a comfier formal dining spot in my life! Except it doesn't feel formal the atmosphere was very jolly, you don't have to watch your sound levels like in some places, it's a really nice ambiance. It's was only how exceptional the food was which is what gave it its formality! To start we opted for a glass of prosecco each and were presented with the most gorgeous little appetiser of Swiss chard soup. It was absolutely delicious and made me realise how hungry I was so it worked a treat. Next they brought out a dear little baked loaf and butter which had been finished with a big sprinkling of maldon salt and course black pepper which we scoffed, it was still warm - oooh yum! For starters I choose a beetroot terrine, with a deep fried ball of blue cheese, a quinelle of horseradish mousse which was very creamy served with a few snippets of pickled shallot. It all worked delicately together and left me gagging for main. Result! G went for the crispy gurnard on a tomato salsa which was his favourite dish - everything was so fresh and the flavours were soft and sharp. It worked beautifully. For mains I had rump of lamb with spinach an peas with confit potatoes. Daaayem giiiiiirl. This is where it starts to get x-rated. I'm fully convinced the lamb was trying to have sexual relations with my mouth. It was the softest most tenderest piece of pink lamb I have EVER had. Exactly the right amount of everything too. The spinach was succulent - I didn't even know spinach could be succulent?! Surprisingly what really lifted the whole dish were the micro herbs, I'm officially a convert. Boom. G had fillet of beef with dripping chips and crab mayonnaise. He said he would like to swim in that mayonnaise. He was as chuffed as me. To accompany our mains we had a Pinot noir which was perfect. We were stuffed but decided to share the cheese board. You only get three but the Yorkshire blue was out of this world. To round off the meal we had the best Irish coffees I've ever tasted served with moist little pieces of brioche-y cake. I was craving them as soon as I woke up this morning. Everything about the evening was faultless. The staff have got the perfect balance of catering to our needs and chatting but leaving us to it when appropriate. The flavours used here are absolutely stunning- each mouthful a delight- and the food is displayed like each plate has been lovingly arranged by an artist (see my pictures for proof). The staff were extremely accommodating and always on hand to top up drinks and ensure that each customer was well seen to. Among the three courses there were also a few little additional free courses - a soup and a chunky, fresh loaf of bread- which made the experience feel much more special. All in all, this place was charming and the food and service really lived up to its reputation. The price was also not unreasonable at all and so if you're looking for a lovely meal that won't break the bank, this is a great option! Tip: book in advance to make sure you don't miss out!

Its by no way cheap but if you want a special night out you won't find a better place within a large radius. The last time I ate there I had Confit of local cod, puy lentils, shallots in red wine for starters followed by Loin and pie of Balcombe Estate venison, cauliflower cheese, Maderia jus. Sounds nice doesn't it! A close friend of mine got married there recently and had such a beautiful day. The grounds are really charming and the whole place has such a lovely atmosphere. Take a quality London restaurant and relocate it in Haywards heath and this is the result. Thankfully, the saying that 'you get what you pay for' holds up well here. I was a chef for 10 years and having eaten here once (luckily someone treated me so i escaped the bill) i was mightily impressed by the menu and wines. Jeremy will usually be about for most chef's heading up the kitchen and this means that the quality is consistent. His wife Vera is of Scandinavian descent and you can see the influence of French, Italian, Spanish and Nordic cuisine in the menu. There are also a myriad of events and ways you can dine. There are Jazz nights on Monday which would be a cool way to dine at the restaurant and many multiple course'offer's. Whilst these aren't going to be cheap, you will get to experience the full range of a very professional chef plying his trade over a wide range of dishes. What you should really get excited about is the wine. Again, it will cost you but they source from some excellent continental vineyards directly and some of the bottles may really reinvent your understanding of wine. I've had my foodie little eye on Graze for some time now, and I finally got to try it out last…read morenight for my Brother's birthday. The interior is plush and apparently influenced by the Brighton Pavilion. It's quite a small restaurant and the tables can appear quite cramped. For the first half hour, we were the only customers and I could hear the staff chatting away to each other which was a bit uncomfortable, however, the restaurant quickly filled up and was soon buzzing with atmosphere. Graze offer an al la carte or tasting menu. The birthday boy had his eye on the tasting menu and as we had to order for the whole table we didn't want to disappoint. I also decided to accompany him with the wine pairing - what a kind sister I am!! The tasting menu included 7 courses, two of which included an option of two which is a nice touch. Homemade bread in four flavours was offered around repeatedly but I was conscious not to fill up too much! The first course was Jerusalem artichoke soup with smoked hazelnut creme fraiche and hazelnuts crisps. This was paired with a very dry sherry, a little unpalatable on its own, but great in combination with the soup. Second course was a chicken liver parfait with pear and star anise jelly, served with a slice of sweet brioche - rich and delicious. This was served with a sweet Hungarian Tokaji. The others went for a butternut squash option but found it was lacking a little in taste and needed added seasoning. Third up was cauliflower and truffle risotto with chestnuts and Parmesan crisp. Matched with this was a crisp viognier. Next was one of my favourite dishes - beetroot cured salmon, pickled beetroot and beetroot puree, creme fraiche and what tasted like amaretti crumbs. The salmon was so fresh and light and the flavour combinations were exquisite. This was paired with a pinot blanc. For the next course we were offered a choice between halibut and venison. We all went with the venison which was served with polenta, grey chantelles and greens. A very tasty dish served with a light pinot noir. The pre-dessert was a chilled mandarin soup with clove sorbet. Such a fantastic dish I was half way through before I realised I had forgotten to take a picture! This came with a fabulous Pedro Ximenez sherry from the Jerez region of Spain. A much sweeter and nicer sherry than the first, at least for my tastes. The final course was a pear parfait with star anise ice cream and almond crumble, this was served with a sweet dessert wine and was a fine finish to a great meal. The Chef here has Spanish roots and you can certainly feel the Mediterranean influence shining through here. The flavour combinations were great and the presentation was exquisite (somebody has been watching Masterchef!). The service was friendly and efficient and the atmosphere was nice. So close to a five star review, but nothing took my breath away, and a few extras such as amuse bouche would have been appreciated*. *Am I really saying there wasn't enough food here, I certainly didn't leave hungry!!

Highlights included scallops (which were so good we ordered 4 plates worth), pigs cheeks, truffle mac & cheese and blue fillet steak. Everything was amazing. As were deserts. They also sell scooners (3/4 pint) of a great draft. It went down a storms and is now my new fave draft. Service was perfect. Nice and chatty but not too so, and the cream of the crop was when we had to wait a bit for desert they gave us free beers while we waited (it wasn't even that long). The fish and chips were average at best. The triple cooked chips were hit and miss, some perfect and others hard in the center like day old roast potatoes. The fish was slightly overcooked and the batter was ok, below average from other fish and chips we've had. The steak was cooked as ordered but again pretty average tasting, the prawns were not the freshest and the squid was delicious. Doubt we'll be back

It was not yet 5pm on a Wednesday evening. The guy at the bar asked if we had reservations, which we did not but they did have space to accommodate us. Now you may be wondering about the food. I can confidently say that this beef Wellington was one of the best I've ever had in my life. It takes 30 min for them to make it but it's well worth the wait. I've been to Gordon Ramsay's in Vegas. I've dined in Michelin restaurants. This was better. The filet was melt in your mouth perfect medium rare with a great wine sauce. The puff pastry and mushroom layers complimented it so well and if you can see that technique, no air bubbles between the meat and the pastry. Service was good. While I think that they're trying…read moreto be a little more broad-minded in their choices these days, I can still see similarities in Michelin starred establishments that I've dined in I spotted Restaurant Tristan on a previous trip to dine at Wabi across the street. The menu straightaway caught my eye with its array of tempting ingredients cooked in a modern fashion and a perusal of their wevsite confirmed modern fine dining presentation So, when the opportunity presented itself to make a visit to Horsham again, I made a point to book here for dinner. My only regret about this meal was that I was unable to coordinate to share the meal with my almost local Yelp fine dining friend Gemma G Horsham seems to be a sleepy but quite large market town in West Sussex. A slight word of warning that the town is a little mazey and your satnav or at least my satnav can get confused. The restaurant entrance is actually on East Street. There is some street parking available on East Street but I'd recommend aiming for Piries Place car park which is clearly signposted coming into town - there's the added bonus that it's free to park there in rthe evening and it's only a short walk to the restaurant from there For a supporter of local businesses, I found East Street a little depressing in that it's full of chain restaurants but at least they have 2 shining stars in Wabi (Japanese) and Restaurant Tristan to get behind and support I received a warm welcome on my arrival and was shown upstairs to the dining room. I love the old exposed wood everywhere and the restaurant has a lovely historic feel to it. Although it was a wet Wednesday evening, the restaurant filled up quickly through the evening Though Horsham is slightly off the beaten track, I suspect the local population are quite affluent and able to sustain a fine dining restaurant. However, I was very impressed at how Restaurant Trsisan is attempting to cater to all pockets, big and small, through its various menus They have 2 a la carte menus, priced at £20 and £40 for 3 courses respectively. However, I was of course drawn to the 5 course tasting menu, which cost £55. In fact, my love of tasting menus has made me think that perhaps I should change my nickname to 'tasting menu'! It was nice to have a small bowl of oilives to munch on while perusing the menus. The bread arrived first and I was intrigued by the 2 butters, which were already on the table. When I tried the darker one, it was a pow moment - packed with umami flavour and utterly delicious. I had to enquire from the waiter what it was - mushroom truffle butter. It was one of the most delicious things of the evening and it was under-sold by the restaurant - if you do visit and it's still on the table, make sure you try it! 1. Amuse bouche of confit salmon with cauliflower veloute A generous portion. Lovely light veloute with rich salmon. I may perhaps suggest the addition of a little lighter salmon, perhaps as sashimi or lightly seared to keep the lightness of the dish 2. Crab, compressed cucumber, pink grapefruit, creme fraiche A quenelle of lovely fresh white crabmeat augmented by sweet and slightly acidic grapefruit and the creme fraiche adding creaminess. Fine dining chefs are compressing everything at the moment - it makes the vegetable or fruit translucent and concentrates the flavour 3. Cured foie gras, chamomile, prune puree The foie gras came out with an almost parfait consistency - nice to spread onto the toasted brioche with the other ingredients 4. Sea bass, cured venison, celeriac, cep, autumn truffle Nice to see seasonal ingredients truffle and cep on the menu. The salty venison was a good foil for the sea bass 5. Lamb saddle & pastilla, Israeli couscous, smoked aubergine For main course, I chose lamb over partridge. Lovely tender lamb with giant grains of couscous 6. Ruby Murray For those unfamiliar with Cockney rhyming slang, Ruby Murray is curry. Yup, curry for the dessert course! What arrived was a slate of saffron ice cream, coriander rice pudding, almond cake and mango sauce From the photos, you can see that presentation was top notch and very modern. Besides my palate telling me that there was a slight under-seasoning (possibly because I had a cold on the evening that I dined here), the dishes were well thought out and executed. I wasn't surprised to find out that Restaurant Tristan were among a raft of new restaurants awarded their first Michelin star for 2013. People of Horsham, you're very lucky that Tristan Mason decided to set up his restaurant in your town. If you have £20 to spare, please don't spend it in a soul-less corporate chain restaurant. Instead, come here for 3 course of Michelin starred food!
