I was actually quite disappointed in my experience at Fabric Sushi. A friend and I arrived one evening and had to wait a few minutes for a table, which was totally fine. We told the host we were just having cocktails and no food when he first spoke to us. We ended up getting seated at the sushi bar after a few minutes and we sat waiting at the sushi bar without menus or acknowledgement from a waiter for over 10 minutes which is unacceptable due to the amount of staff on hand that evening. We were getting angry and talking about another restaurant to go to when a couple left the bar, so we jumped up and moved over to the open seating at the cocktail bar. They offered a good selection of cocktails both signature and classic options, though most cocktails were around $300 pesos which surely had to do with the upscale ambiance of this place. My cocktail, the negroni pictured, was delicious as usual but there were a couple things we didn't love about the visit. The entire night I watched the bartender handle ice, garnishes for drinks, glasses, and tasting spoons with his bare hands, and never washed them once in the hour+ we sat at the bar. This was very off-putting to me, seeing the bartender reach into a container of orange slices, pull them out with bare hands, and THEN place them into tweezers before applying to the rim of the glass. THIS IS A GIANT RED FLAG. I liked the ambiance of this place but after our service, the prices, and the bartenders lack of food safety hygiene I absolutely would not be back. read more

The service was nice quick and amazingly polite and cool. My server was on top of his game. The portions for my taste are a hit or miss. But I am used to American big portions. It is good value if experienced on different plates. My salmon fried rice was the perfect dish. Extremely flavorful original and with a good price. The ambiance and location is excellent. Pretty trendy sushi restaurant with a lot of staff, i counted 20 people on a saturday night. We sat in the bar and had champagne and the langoustine starter. It was rich and with nice texture in the shrimps. The nigiri sample is your selection of five different sushi, two pieces of each. They are not classic but fun and all of them taste nice. The maki are pretty decent and most importantly all the fish seems really fresh and well handled. The service is ok, they are so many and they really try to be helpful and attentive but sometimes it goes wrong like the time a guy ask if he can fill up our glasses and then pours the bubbly in our lap. A bit pricy but the quality makes it good value for money. read more

Very trendy, dim lighting, cocktail bar, sushi bar, waitstaff in black, etc., etc. You know the look. It's located just a block away from La Mar Cebicheria, and I have no doubt that there's a hope for catching some of the overflow when La Mar is fully booked. Then again, this place was packed to the gills too. I can't say I was enamored of the way that fish is just sort of piled up somewhat haphazardly at the sushi bar - it just looks sloppy. The spot is more a specialist, like La Mar, in Nikkei cooking rather than traditional sushi, or Peruvian food. Ordered up a gin and tonic to start the eve - it didn't arrive until after I'd finished my appetizers (which arrived within five minutes of ordering them - relax people, we're all here to enjoy the evening, not eat fast food). A quartet of "tacos" made out of deep fried wonton wrappers that puff up. Tasty, creative - each one a different kind of fish, toppings, and seasonings - two different white fish, salmon, tuna - all quite good. Once I got my drink, I was happier. Decided to just get some of the more creative sounding nigiri sushi (plate of 10, 2 each of 5 different types from the menu, a flat 250 pesos), plus some fresh tuna. The fish nice and fresh, the flavorings excellent, but two drawbacks: they're really small, especially for the price, maybe 2/3 the size of traditional sushi; and, the rice is way, way, way too sweet - it tastes like it's drenched in mirin with nothing to balance it out. It was like candied rice. I don't know if someone just screwed up that night or if that's their way, but it really skewed the flavors off the rails. Left to right, top to bottom - octopus with black olive, salmon with salmon roe (those aren't salmon roe, and had there been more than two little beads atop each, I might have complained - they're using these jarred fake fish eggs made from algae and flavored to taste like different fish eggs - but either way, they shouldn't claim them on the menu as salmon roe), seared salmon with lime and truffle oil, steak with anticucho sauce, and another salmon one that I've forgotten now. Overall, fun place, I could see it more of a trendy date night out (if Henry ate sushi). It's good, but not as good as La Mar, just a block away. Pricey, plus they have a 40 peso cubierto. All told - cocktail, tacos, 12 pieces of sushi, bottle of water, cubierto and tip and it came in at 825 pesos, or about $53. I think that's probably as expensive as it would be in NYC for the quantity and quality of food! read more
