Fredo's is a taco truck parked on the west side of Highway 1 just south of Moss Landing at the Thistle Hut vegetable and fruit booth. Although it's a food truck, do not underestimate the quality and flavor, as this food is fantastic. The cost is three bucks per taco and three will fill you up, so the price is great too. The menu is simple but every item is good and no animals were hurt in its preparation! I really can't recommend these tacos enough and meat eaters will like them too as they are really flavorful and well seasoned. read more

My go to favorite is absolutely soy al pastor but I also enjoy the two types of chorizo tacos. Our non-vegan guest also really enjoyed the tacos. If you have a big order, you can call it in ahead of time. Take the entrance to the parking lot from the main road bc the side road is rough for cars that arent high off the ground. read more

Wow, this is a gem. Delicious, affordable tacos with fresh ingredients. The al pastor tastes like al pastor, the asada tastes like asada, the red chorizo tastes like chorizo and the mushroom taco was super delicious. Friendly service and order came out quickly. Plenty of parking right off of Route 1 - if you're going through Moss Landing driving between Santa Cruz and Monterey, an easy stop. Menu is simple and clear. There is a mild green sauce and a very good and spicy hot sauce that they make to enhance the tacos. Also had some pickled vegetables, but we got there half and hour before closing so the veggies were almost gone save some radishes, but those were great. Tacos come with lime wedges and if you want, onion and cilantro. Four tacos for $12 is a great price point. Large selection of sodas. Pro Tip: If you know what you want, call ahead about 10 minutes and they will have it ready for you to pick up and take to the beach, your hotel, wherever. Stopped by Thistle Hut today for some fresh produce, and happened to see the truck advertising "vegan tacos". I thought they served meat tacos and happened to have a vegan option, so I walked over and learned that everything was vegan. What??!! Ordered the one made w/ chickpeas and sunflower seeds, and later wished I'd ordered 5. Gave them $6 and told them to keep the change. What can you say about this place that hasn't already been said. These are great tacos, and they just happen to be vegan. I'm obsessed. My wife and I have been coming back every weekend. I've tried everything. It's all good. I recommend you get *at least* one of each, and if you can't eat all of them, come back another time and try the others. I really like how they don't have the same base, too. The red chorizo is garbanzo bean based, mushrooms are... mushroom based, and of course a variety of soy based products. The diversity in 6 different tacos is just great. It always hits the spot. There's something authentic about eating some good tacos in an open field, too. I normally do eat meat, but I'm on a fast where it embodies a vegan diet and I couldn't tell that the tacos were vegan. The avocado sauce is one of my favorites. Just ate there this afternoon and WOW. My partner and I tried one of each taco and they were all incredible, although next time I would get 3-4 tacos because they're well portioned.
