    We were aware that there is a substantial immigrant community in Liberal, so we were cautiously optimistic that we could find something other than the same old American chains here. We were pleasantly surprised to find several types of Mexican food from Sinaloa, the DF, and Jalisco here, but THRILLED to find authentic Central American food! We decided to try Gallo Pinto, a Nicaraguan restaurant, since we have never had Nicaraguan food before. Boy! Are we glad we did! Gallo Pinto has earned every accolade we read on Yelp - the restaurant is in a humble 1950s former cafe building that probably served the motel next door. It's simple and humble outside, but the food and service inside is excellent. It's also busy at 11am - late breakfasters meet early lunchers! :) It was clear when we sat down in the immaculate dining room and were served chips and a homemade fiery green salsa that EVERYTHING here is made by hand and made to order. We had hoped to try the Nicaraguan tamales, but those take an hour to prepare :(. If you want to try them, the waitresses recommend you call ahead so they can get them started. Our waitress recommended we try the queso and plaintains for the lighter appetited. They were a brilliant choice! Super thin shaved plantains fried up crispy and served with grilled salty cheese made a delicious and exotic bite that was just enough for an early lunch. I had skipped breakfast so I was much hungrier. For me, she recommended the Nicaraguan enchiladas, and I am so glad I agreed! The menu description does not do it justice - Nicaraguan enchiladas are DELICIOUS and UNIQUE. They are not your typical tortillas rolled around fillings and topped with sauce. They look more like empanadas, but with a pillowy-soft corn breading that's fried to crispy perfection, enfolding a perfectly seasoned delicious meat-vegetable-onion-and rice filling. The enchiladas come three to an order, with a side of Gallo Pinto (mixed white rice and whole beans) and a tangy cabbage slaw. We recommend the enchiladas very highly, and hope we can find them in Dallas :) Gallo Pinto was an amazing gem of a place we would have never found if not for Yelpers - so thank you Yelpers!! 5 authentic taste of Central America in Kansas stars!!

    BE WARNED: LONG WAIT. They've only got like 2 people working, so that's expected. We ate at like 12:30 or so for reference. Food wasn't really to our liking, and maybe that's just us but that was the case nonetheless. Red sauce was out of a can, really chemically tasting. Beans were flavored a little off, not bad just off tasting. The Carne plate was extremely sweet tasting. The green sauce on the Chile's plate wasn't bad, had some heat to it. Salsa was really cilantro tasting, not terrible but no heat. No real heat for any of the meals.

    If you are ever in Liberal, KS at breakfast time you have to try this place! The Eggs Ranchero are fabulous! I mean really, really good. I could eat these every morning! The service was friendly and fast. Has to be the best Mexican breakfast I've ever had... Yum!

    If you are in Liberal and haven't had the food here you have seriously done a disservice to yourself! I can't express how amazing a find like this place was. If I could take any restaurant with me back home this would be my pick 100%! The food is amazing! I haven't had better Caribbean food anywhere except in the Caribbean and even in that region of the world it is hit or miss... this place would contend with the best I've ever had! Honestly I am a very critical foodie and it's rare that I give a five star, but Gallo Pinto has earned it! I brought a few guys I work with here and they were as surprised as I was with how delicious the food was! Along with the food it's clean, has kind and attentive service, and the pricing is very fair! Give it a try!

    Stopped into this little gem to grab a late lunch. Everything tasted great! I had the Pollo Asado and it was packed with flavor.

    Food was bland, dry and cool. Service was mediocre and slow. Place was somewhat clean, but could use some deep cleaning.

    The Owner or Manager made us two Chicarron Burritos and my mother-in-law fajitas. The Chicarron was good. The owner was nice.

    Have been here over a dozen times. Food is always amazing. The Nicaraguan enchiladas are some of the best food I've ever eaten.

My only area of dissatisfaction was the failure of the server to provide refills on the chips and our water without our asking. However, overall, I highly recommend this restaurant and would eat here again if I were in town.

Today I visited and ate there; I was pleasantly surprised to find a huge Mexican food menu that also included seafood. So I picked an item from their Seafood menu and one from the other menu. Aguachile and Caldo de Res. These are two well known staple dishes. One is popular in the coast, the other in every Mexican town. If either one of them was improperly prepared, poorly seasoned or served wrong, I would know to never come back. I'm happy to report that both passed with flying colors! Delicious, flavorful and generous portions, authentic and thoroughly satisfying! The place is clean, prices are modest and the service is friendly and quick. The two ladies in charge are all smiles and make you feel welcomed. I wish every little town had a place like this. And it speaks volumes to the contributions and entrepreneurship of immigrant families, making small towns more colorful and attractive. Muy bueno!
