Mead is the way to go! The location is a little weird and feels like you are in the wrong place. Breweries are great and all but it's nice to go somewhere different. Definitely get the feeling that locals are welcome but if you're not a regular you just not on the same level. First off - before Honnibrook, I would never have sought out a meadery. My conception of mead is that it's overly sweet and overly boozy. Honnibrook is different - their mead is light, refreshing and they had so many fun different flavors to try! Everyone at the meadery was so nice and let us try the base mead as we walked in, to set a baseline for a mead without any of the flavoring. It was again light, crisp and not syrupy-tasting. My husband and I ended up getting a flight of 4 - the slushie mojito, earl gray lavender, island hopper and huckleberry. The earl gray lavender was delicious - we ended up getting a bottle to bring home! My only critical feedback would be the flight options - they had several flight options (1 taster for $4, then flights for 4 or 8). There was no economical benefit to getting a 4 or 8-taster flight, versus just individual tasters, so don't think the flight pricing makes sense since it's just a per unit price regardless of how many tasters you get. While in Colorado recently, touring the breweries we stumbled across this little meadery in Castle Rock and it was such a great find. Large selection of brew, friendly and informative staff and the atmosphere was chill and inviting! We ordered a flight of 8 for $24 and as you can see from the pics, was an absolute steal! My favorites were the Natural Beauty and Earl Grey Lavender although they were all yummy P.S. Such a fun place to enjoy craft meadery (read: any cider you choose will be and was delicious). Honnibrook was a little bit of a drive for us, but so much fun and worth every mile. We stopped in as one of our favorite local artists, Josh Blackburn, was playing. He plays here every month and is always a great time. If you haven't heard his music, look him up. He does covers and has his own originals that we've fallen in love with. Honnibrook hosts him once a month and when it's warmer, they have massive garage doors that come up and spill onto the outside patio area. Let's talk meadery. Oh my word. This, my friends, is easy drinking. Be careful! We loved everything we ordered and took home a few bottles we didn't even try - because like I said, it was all so good! My favorites were the Cherry Limeade slushy, the Huckleberry slushy and the Peach Habanaro mead. My guy really liked the Lychee and Raspberry Chipotle. A little unsure of what laid ahead of us, we stopped in this afternoon to explore the world of mead. First, the woman (manager? Owner?) who served us was wonderful. She was both informative and extremely helpful. She started us with the base flavor (extract?) of mead, which was kind of similar to a Pinot gris or Sauvignon blanc. From there, we named off several flavors that sounded interesting to us, and she prepared an eight-flavor flight for us to try. Along the way, we each found our favorite, and for the few none of us cared for, she voluntarily replaced them with other options for us to try. Located in a warehouse park, Honnibrook is a little different from your typical brewery or winery, and it has a unique vibe all its own. However, it's got its place in Castle Rock. We could certainly see returning when in the mood for more mead. read more

I decided to surprise my wife with a trip down to Castle Rock and a visit to this little gem of an establishment after work on a Friday. The place was packed with happy people enjoying the end of the work week. Though we've made a lot of mead over the years, we had never experienced what Honnibrook offers - a base, beer-strength fermented honey beverage infused with a variety of fruits, spices and other flavors. I got the prickly pear mead first, then went with the base unflavored mead for my second glass. My wife had a taster flight - my sip of her coffee-infused mead was amazing! Owner D.J. took great care to explain what was being offered, and made us feel welcome from the moment of our arrival. The entire staff was excellent and courteous. Love Honnibrook - a new local fave along with Manna. The mead was fun to try, and they offer many different fruit flavors. The interior has an industrial feel but the servers, manager and other guests were welcoming and made us feel like family, though it was our first visit. The night we were there had a fantastic musician (Brad Hennig - Giant Zero) playing & singing a wide range of acoustic music, and the Stack'd food truck was a few steps outside and served surprisingly excellent food. Honnibrook does Mead so well. Mead is a great drink that is in between beer and wine, and comprise where the beer-lovers and the wine-lovers all win. Honnibrook does a lot of different meads (about a dozen) and if you aren't familiar with it, the menu selection can be overwhelming. Natural Beauty is where to start, it's the most basic "pure" mead. But if you want a refreshing drink on a warm day, the Hive Mojito Slushie cannot be beat. (Guys - seriously, when you bring your wife or girlfriend here, get her the Hive Mojito slushie to start. Cute little place in Castlerock! They have an upstairs area and outdoor area when it is nice in addition to the main floor. Love the selection of mead here. We tried almost every one and with the nice selection you will find several that you will like. Sweet to dry and also had the slushies this summer so there is something for everyone. We had tried some of their mead at a tasting event earlier, so when we were in the area we decided to stop in to try some more flavors. My favorite was the lychee. An employee told me I should try it as a slush, so I did. If I'd have known how good that was, I'd have just gone with that. It's dessert in a glass. We tried the lychee, guava, black cherry and peach habanero. I'm a spice wimp, so the habanero hit me right away. The guava was probably my second favorite. The black cherry was good, but not as sweet as I was expecting. All of the meads were wonderfully balanced in their flavors. The service was outstanding. These are all questions I needed answered. Honnibrook is definitely 3 or 4 minutes off the beaten path, right off the I-25 frontage road. Not too far, but not walkable. The place felt like a brewery in its layout and entire vibe. The owners and other staff were super friendly and eager to tell us all about Mead, their Colorado honey suppliers, and the brewing process. I started with their basic mead and it reminded me of a light, refreshing beer with lower carbonation. Something you could sit outside and crush on a nice day. I loved it so much I decided to try all nine of their mead variations (don't judge me). Favorites were the salted mango and the prickly pear, but I really like the basic one without any fruit added. We grabbed a couple of to-go crowlers to give to friends as well. At the end, did I feel like a Viking? No. Just the same loser who writes the occasional Yelp review. But I had a nice mead buzz which helped me come to terms with that.... Bottom line: This place rocks. If you like craft breweries or wineries, this should be in your wheelhouse. read more

The first time I walked in, I was immediately greeted by one of the owners, he knew it was my first time and gave me a free sample of their base mead (which was lovely) - ended up buying a glass of their Rose & Hibiscus mead and WOW, best mead I've ever had! Ended up coming back a week later and got a flight of a bunch of different meads to try and all of them were unique in their own way although I was sad to hear they were out of the Rose & Hibiscus, still my favorite one! They also have a food truck that changes on different weekends so food is available as well. So I'm going to be honest, I haven't personally been to this location, however I did have a friend bring me a can after visiting here herself. After hearing about the hand crafted mead, and a variety of flavors, I chose the "surrender". A delicious blood orange. Not too sweet, but also not over bearing on the alcohol taste either, which is something that I personally look for in a good mead. Being able to enjoy this in my own home is also a huge plus. $12, and you can take home a crawler of your own! The aroma is absolutely amazing, great flavor, color, and above all, fresh. They even print the date it was made on the can, suggestions for best taste within 2 weeks. All I can say is that they have definitely outdone themselves. I'm considering going on a road trip myself to try out a few more of these delights. Overall 10/10, and they have earned a long-standing customer, and once again, I haven't even personally been there! Which should speak volumes about their products.
