Hiram, Jordan, BRAVO! My family (8 of us, with all very different tastes) have unanimously agreed that Hiram created for us one of the greatest meals each of us have ever eaten. The food however was not the only high point - Honu Cuisine is a package. It's Hiram's incredible ability to source the best and freshest ingredients, use his customer's menu choices to perfectly match those ingredients, and create a beautiful, artistic, and incredibly tasty meal. It's also about Hiram's carefully chosen "front of house" assistant. That's right, he comes with a partner. In our case we feel very lucky and honored for that front of house to be Jordan. He is a long-time resident of the island, a fruit and vegetable farmer, and an incredibly knowledgeable foodie and Maui host. Separately Hiram and Jordan would be spectacular, together they are magical. The meal was entertaining, stimulating, and delicious. We were in Maui for a friend's 35th birthday and she hired Chef Hiram to prepare her birthday dinner. Chef Hiram and Jordan were so much fun, and the dishes were incredible: the shrimp appetizer, the risotto, the crispy skin onaga on jalapeno/pork belly slaw, the roast chicken with pine nut/caper puree and root vegetables, and the banana coconut cream pie with fresh fruit in a savory/sweet crust. All the ingredients were fresh and organic, some picked only hours earlier on the estate Jordan manages. Everything was gorgeously presented and delicious. A real treat! read more

The catch of the day with a macadamia nut purée was the best fish dish I've ever had and the dessert (pineapple cake with banana ice cream) was to die for. In early January, my husband and I hosted our adult children, their spouses, and two grandkids in Maui at our Marriott Ocean Club timeshare to celebrate a landmark wedding anniversary and a family birthday. In thinking about some activities that our group might enjoy, I read a Tripadviser review for our property that contained a very brief reference to Honu Cuisine. I decided to at least explore a private chef dinner as an option and caught Hiram on his cell phone while he was driving. We had a brief conversation, and then we began an email dialogue, easily confirming dates and trading information about a menu. When I arrived in Maui, we had a phone call, and confirmed the menu and the timing for his arrival at our condo. I have to say that my basic expectation, because of the little time I invested in the planning, was that we would have a nice meal with the family that I would not have to cook or clean up from. Wow!, Did I under estimate what I was signing up for. I am going to take the lazy way out in writing this review and to the other five-star reviews I say -- "ditto, ditto, ditto!" We had an 8-course, to die for, over the top gourmet experience that punctuated the fresh, local ingredients with the most spectacular, interesting and surprising flavors and preparations. With each course, we thought the next could never top it, and then an equally or more spectacular dish was served. Picture six adults, with different tastes and preferences, savoring each bite with eyes closed, humming our satisfaction. Clearly, Hiram is a talented chef. Beyond that, he has a wonderful, easy-going manner and his affect enhances the magical and memorable experience. This is not an inexpensive event, but the value makes it absolutely worth it. My only hesitation in adding to this collection of 5-star reviews is that on our next trip to Maui, Hiram will be too popular to book. read more

A special dinner for honeymooners. We had an awesome dinner prepared by Chef Hiram. He definiely impressed us from start to finish. The pork belly & pineapple (jalapeno slaw) appetizer, delish fresh mahimahi/ veggies, lamb with carmalized eggplant and lastly the homemade ice cream with plantain and carmel sauce. Chef Hiram came through when I was in a real bind. I thought I would have a restaurant cater my event to save a few buck but, with anything, you get what you pay for. The restaurant backed out the day of my event and I was left stranded! I called Hiram and not only was he able to come through everyone LOVED him and his food was amazing! So amazing, we brought him back a 3 days later. I wouldn't suggest calling any chef day of, it's not fair to the chef. (Sorry Hiram). But if you're planning an event, no matter what size, call this guy! Hiram is genuine, very easy to work with, and an EXCELLENT chef! I recently went to a yoga retreat in Maui where Chef Hiram was the personal chef for all of our meals - breakfast, lunch, and dinner - for a full week. His meals were easily one of the highlights of our retreat - each dish was made with fresh, seasonal and local ingredients, and Hiram's dedication to only using the highest quality ingredients really showed through in the flavors of each dish. Despite having to feed 16 people with varying taste preferences, and some with gluten/meat/sugar dietary restrictions, Hiram was able to meet everyone's needs and ensure that everyone was able to enjoy a delicious meal, regardless of any restrictions. Even people who were normally much pickier eaters couldn't resist Hiram's dishes - that's just how well-made and delicious they were. Beyond that, Hiram was also just a joy to be around. My family and I just came back from Maui. On one of the nights, we had the absolute pleasure of having Chef Hiram cook for us. This was by far the most incredible dinner we had while we were there. The experience alone was enough to get a 5 start rating but his cuisine was simply divine. Chef Hiram was the consummate professional and his intriguing backstory is highlighted in his cooking. Chef Hiram chooses locally sourced ingredients that are in season and describes with passion each and every course. Ranging from pumpkin, to beets, to shrimp, to ribeye, Chef Hiram has remarkable elegance with delicious flavors. My wife and I are still talking about this dinner. The best part is that Chef Hiram is a very COOL guy who you want to hang out with after the meal is over. Absolutely incredible. True to all the other reviews, Chef Hiram was a culinary genius. He came to our villa and spent two lovely hours preparing a masterpiece. At first we weren't sure about the wild boar tagliatelle he had suggested because we'd never tried wild boar, but it was amazing. I 100% recommend that extremely unique and well crafted plate. Then, his catch of the day + macadamia nut purée was to die for. We finished off the meal with his carrot cake and homemade salted caramel ice cream which, unsurprisingly, was fantastic. His ingredients are so fresh and all come together to create something so delicious. Not only that, but he is extremely pleasant and we loved having him around. read more

His food is excellent, with thoughtful and original touches of brilliance (and this coming from a Maui boy who now lives in the San Francisco Bay Area, where standards are quite high!). We just celebrated my wife's 40th birthday in Maui and I wanted to do something a little out of the ordinary. After reading the glowing reviews posted here I felt pretty confident bringing in Chef Hiram would fit the bill. I have to say we couldn't have been happier with the experience. Everything described here about the quality of the food and service is dead on accurate. Hiram was very easy to work with while planning the event and the whole evening went on without a hitch. We had four girls, ages 9-11, in our party. Hiram and his assistant Jordan had them absolutely engaged for 2 hours plus during the preparation time. They had so much fun talking, watching and "helping" with the meal. Amazingly somewhat picky eaters now had to try everything they helped make and they loved it. Hiram prepared an AMAZING and very memorable dinner for our family of 34. His food was delicious and unique. Each dish had something special and yet they all went together so well. I would not hesitate to hire him again! This would be on the "must do" list on our next trip to Maui. The Pork Belly appetizer was truly a melt in your mouth-amazing flavor-great texture-little bite of heaven! Be sure to ask him to make a few for each person. You will want more than one! We also loved his Onion Tomato Quinoa Salad. He marinated the onions in a cilantro vinegarette for this salad. Absolutely delicious! Doing my best to recreate this one! The main courses of tenderloin and chicken were both perfectly cooked and very tasty. The standout was the fish he made. This was served over grilled vegis with a mouth watering macadamia nut sauce. I can't write enough about how incredible this experience was. Chef Hiram and Tod came to our condo in Kapalua and cooked an amazing meal for my wife and our friends as we both celebrated our 10th wedding anniversaries together. The wine pairings were perfect and unique, allowing us to try a few varietals we have not had before. The creativeness of the presentation was unmatched to my other experiences. We began the evening out on our balcony with drinks and the first three courses while watching the sunset. We moved into the dining room for four additional courses and continued to debate which was our favorite. There wasn't a single course we did not enjoy. Hiram and Tod also were interactive, educating us on the local customs and local sources they used to acquire the ingredients. The communication before hand, the setup (we surprised our friends), the meal itself, and after was all top notch. I feel sorry if I ever have a private chef again where I live (Chicago) because they will pale in comparison to this meal and event. Chef Hiram made us a spectacular meal on our honeymoon, the best meal by far on our trip and one of the best in our life! The ingredients were locally sourced, sustainable, so fresh and everything he made from scratch including nut milk, cottage cheese and fantastic ice cream. The flavor shined through from using high quality food. It was fun learning from him as he cooked also. The dishes were very well planned and we even had wild boar which is something you don't see on a menu. We bought 5 packages of the chocolate he used in our dessert before we left the island. I contacted Hiram through a referral from our rental villa. He prepared an exquisite Shabbat meal for us complete with four freshly baked challah. Our family group of thirteen raved about it and the entire meal. Every ingredient was locally sourced and fresh. A delicious appetizer which started with homemade ricotta topped with cornmeal croutons and freshly roasted sundried tomatoes. The salad was comprised of fresh beets drizzled with a rich balsamic vinegar and the entree was monchong fish from the islands surrounded by an elegant macadamia nut purée and fresh vegetables. It was topped off with an exquisite chocolate mousse and fresh Lilikoi-laced whipped cream. He was a lovely person to work with. His assistant Sara was a delight as well. read more

The kindest man on Maui! We hired Hiram based on reviews from this site about how amazing his cooking is and I loved that fact that he uses lot's of locally sourced ingredients. In the end we ended up with a nightmare vacation rental owner who would not let us have a chef at the property and we could not use Hiram for our wedding day. Through all of the correspondence we had with Hiram he remained lovely, supportive and helpful; even taking time out of a vacation in Africa to email us suggestions and ideas for making the wedding work. Although we unfortunately did not get to try his amazing cooking, we were awed by what a wonderful and kind person Hiram is and we will most definitely hire him when we come back to the Island again(and stay somewhere else). read more

My family was in Maui to celebrate my wife's 60th birthday. As we are all decent cooks and 'foodies' , I thought a private dinner would be a great way to celebrate the event. Restaurants are noisy and impersonal. I wanted both an event and a meal to remember to remember. Chef Hiram Peri provided us with both. We had some email exchange (where I got introduced to his cuisine and pictures of his food) , followed by a few phone conversations to work out the specifics of our menu. Hiram tuned into the vibe I was going for and had some great suggestions. We touched base when we arrived, and firmed up the details of our dinner. He and Lena arrived on time with a variety of locally sourced goodies, some of which we grows in the volcanic soil of their backyard, He made the pasta he served with the rabbit ragu, rabbit bred and prepped by his neighbor. Everything was fresh, attractive and unique. Hiram is a personable fellow, and we enjoyed talking to him and Lena while he concocted our outstanding repast and she preserved the spectacle in pictures. They set a fabulous table for us and our 6 course dinner. Each course was both beautiful and delicious. Hiram is a master of timing, pacing the meal so we could converse and savor each course to the fullest, but still managing no lags in the procession of dishes. The upside down cake was the bast birthday cake my wife ever ate! Hiram followed up with me to see if I would post a review. He kindly made the offer to provide recipes for anything we particularly liked.. I hope he's prepared to write out all six amazing courses ! Hiram's service and cooking are top notch. Our family of 13 with diverse tastes all absolutely loved the meal, and the service and presentation were superlative. We were in a rented home with a great kitchen - all we had to do was clean it and the dining room beforehand, and Hiram and his assistant did the rest. Sooooo relaxing to have a meal where you don't have to shop, prep, cook, serve, clean up, or even mobilize to go to a restaurant (and no designated driver!). Five courses, all great - and healthy, too. We loved that some of the veggies come from Hiram's garden and he sourced as many ingredients as possible locally. Hiram came to Ho'olei at the Grand Wailea, Maui and we were simply thrilled with his efforts, calm demeanor and phenomenal menu. There was simple joy in every bite all 11 of us savored from our meal. He patiently allowed our nine year old granddaughter the opportunity to be "sous chef" even though he had much to prepare. We truly appreciated all of his efforts to accommodate various food allergies and wishes. His keen choice of fresh, local vegetables, fish, beef and specialty fruits were--like we have never tasted. His rubs and sauces were BEYOND FLAVORFUL. This by far, was one of the best meals we have ever tasted. Hiram even masterfully managed to encourage our non-fish eating son-in-law to try two fish dishes whose preparations convinced him that fish, if served this way, could actually be thoroughly enjoyed!!
