Great cheese shop, easy stop right off the interstate. Ample free parking. They have way more than cheese, other snacks, plenty of gift type items. Hand dipped ice cream cones as well. I couldn't quite pull the trigger on the 25-year-old cheddar, it was a bit speedy, but there are plenty of other options. I bought three cheeses and some crackers. Hummingbird is owned by Marketplace Square in the Lake Delton. That is our go to place when in that area. The Tomah location is small, less inventory and a bit outdated. There was a lot of local jellys, salsas, fudge, syrups and of course all types of cheese from all over Wisconsin. Cedar cress ice cream was also available on many flavors along with floats, which my son enjoyed. I would still recommend the stop if in the area, but in the Dells I would suggest Market Place. There are LOTS of cheese places in Wisconsin. I found this one to be a little odd in that there was more "other" stuff than cheese. They had bear items, loon items even candles and potpourris but the volume of assorted cheeses, for a "cheese mart" were underwhelming. read more

Oh my God! Now I understand why Wisconsin is the cheese capital of the world! I stopped by with a couple of coworkers and got to sample some cheese. They had been there before and took me on their cheese run. I tried the Morning Sun Pesto and Herb and Spice Havarti. Coworkers bought tons of cheese to include the smoked string cheese which was also yummy. It was cheese galore in there. The woman at the cheese counter was super friendly. We were able to sample anything we wanted. My boyfriend loves cheese, and if we ever get to be back in Wisconsin, I would love to take him. We love cheese and wine nights. OMG did we get lucky!! Just happened to pull off at this exit and will forever plan to in the future! Everything was amazing! And we have tons of cheese houses in Michigan, ( frankenmuth, Pinconning, etc), but the string cheese, curds and selection in this place puts it over the top! And the fresh bread to go with it! We even bought a whimsical cheese cut out shaped like a daschund. ( see pic of our daschunds in the parking lot looking happy, lol!) Very high quality! Love it! read more

Ordered $50 of cheese from their website on 4/25. They charged my credit card on 4/26. They charged my card $77.44 ($26 was for FedEx shipping). I agreed to this shipment price. They have yet to inform me that they shipped it. I've sent two inquires to them, and they have yet to reply. I'll now have no other choice than to file complaints with my credit card, and whoever in Wisconsin that oversees on-line sales fraud. Beware of this company folks. Cheese shops in Wisconsin are a dime a dozen and you will find them everywhere. Humbirds is a nice stop off point for my family in Tomah to take a quick rest stop and get some foods to snack on. Decent selection of cheese as well as candies and other snacks. Not the cheapest place but we never buy in bulk anyways. Yeah this is a cool little cheese shop. Looks a lot bigger from the outside but I'm guessing this is where they make their cheese so maybe half the store is off limits. The best thing about this place? They make maybe 30-40 different cheeses and you can taste any one of them before buying. Yep, even their 12 aged old cheese-which is fantastic btw. So is their brick cheese. They even have a ghost pepper jalapeno cheese which scorched my mouth pretty good. So definitely swing on by and try a dozen different cheeses. read more

For selection; this place wins! Stopped here on our way to the Dells. What a great shop! So many different kinds of cheese to choose from, along with summer sausages, pickles, and other gift shop kinda stuff. Debating back and forth between a few different sausages. Wound up choosing the Stoneridge pit smoked garlic sausage. It was amazingly good. That smoky flavor won everyone over and me wishing I had bought a few more. Might have to stop on the way back home. I also picked up some door county pickle spears which wre equally good. Pickles can be hit and miss. These were tasty. My parents had us covered in the cheese curd department. One dill and one white cheese. Squeaky and fresh and gone real fast. Interesting selection of products. Even my husband found something of interest. Now you out of state visitors, if you're used to places like the Cheese Castle, Humbird is going to look mighty tiny compared to the Castle. And in a way, it's ok. We stopped here on our way home from the Cranberry Fest in Warrens. We always try to buy some cheese curds and sausage before we cross the IL state line. And I was pleasantly surprised with the choices of cheese available, not just for purchase, but to sample! It looks as though you can sample every cheese in their cheese case! Because of the very generous sampling policy, we got to try some interesting cheeses. Chicken Soup Cheese? really really good...I'm eating a couple slices of it on multigrain crackers right now. Cranberry cheese? well, it WAS Cranfest after all. There's another case with the basic cheese staples--blocks of cheddar, summer sausages, spreadable cheese, cheese curds. Because it's on the smaller side, it gets very crowded. I'm afraid to walk around the store for fear of bumping into someone that would ricochet me off into a shelf of breakables. Oh well. The only thing I wish was that there was more soda options..we love buying flavored sodas and trying different brands. Service is super sweet and very nice. I still love this place! In a previous life, I had a contract job up in Chippewa Falls. I was there one week every month and when I could, depending on the time I found myself driving through Tomah, I made sure I stopped at Humbird. The store was smaller then, and was identifiable by being in the shape of a barn and you walked through a Fiberglass silo to get in and out of the store. That little barn is long gone, replaced by a larger and even more modern store. After jumping off the I-94 at Exit 143, you pull into a spacious parking lot and walk into this newer store to find a long cooler that's full of every kind of Wisconsin cheese you can possibly dream up, and then several you never dreamed of. Can't decide? They'll give you a sample. Still can't decide? Take a walk through the store and check out shelf after shelf of souvenirs and amazing gift ideas. Then come back to the cheese. If you ask the right person, you'll hear a great story of a very old company that started out east of here in the hamlet of Humbird, namesake of the store. Humbird Cheese is probably well over a hundred years old and it's still one of the best cheese stores I've been to. Seriously, go there. Bring lots of money because it's easy to go nuts at the cooler. And worth every penny, too! read more

Decent selection of Wisconsin cheeses. A lot of the standard boring cheddar selection... but a few that are a bit unusual. Picked up a morel cheddar and a raw goat milk cheddar.. The morel cheddar turned out to be fairly boring. We picked up some pretty great bratwurst here. The bratwurst are the only thing I'd go back for. They had a huge thing of Amish butter that was pretty cheap. They have ice available if you need. It's right off the highway if you're traveling northbound. However, traveling southbound the exit is actually a 1/2 mile before the road this place is on, then you take a road or two to get here. You can get right back on the highway going southbound though. Bathrooms were beyond disgusting ... One of those pee standing 5' from the toilet scenarios to avoid standing in a puddle of pee. read more

I've stopped here several times. There's always a good selection of cheese, and they have a gift shop with a ton of different souvenirs. Nice people working there. At the end of the cooler, they have a small snack bag with cheese and some processed meat. If you get an apple or a banana, it makes a great lunch. The location is a good stop because you can get gas, fireworks, cheese, and hit an antique mall, all without moving your car. read more

Humbird is a fun way to spend a break from driving on I-94. They have lots of local and regional products, tons of different cheeses and sausages, etc. You can get candy, crackers, chocolate and loads of little gifts (magnets of Connecticut: what?). Mixed feelings so I'm going with 4 stars. Stopped in while out for a Saturday drive. Parking lot was empty except for two kids stopping in for ice cream. Lot was clean. Inside seems clean and organized. Lots of variety of cheese. As a Wisconsinite, I noticed lots of variety of cheese from creameries I know and love. I was surprised at the variety, but very thrilled to see things from smaller creameries as well as the "major contributors" people are more familiar with. I have to agree that it does have a super touristy feeling. There's lots of Wisconsin themed items. But they also seem to be trying to capitalize on the whole kitschy, kitchen gadget/gizmo fad and I think that's what makes it feel kind of touristy because there is just SO much of it and I found myself kind of disinterested. Staff was pretty quiet. They offered to help then pretty much left us to our own devices. I am generally a person who doesn't have many questions and if I do, I google. For people who generally have a lot of questions or prefer that someone attend to them for their entire shopping trip (come on, you know who you are), this might not be the place for you. Definitely not the cheapest place. For creameries that I *know*, the markup seemed to be about what I see at other places but there was lots in there that I wondered if I could get elsewhere for a better price. read more

Cheesy and touristy, and they also sell cheese. A very good selection of Wisconsin cheeses, but be careful if you're looking at anything else in the shop. It's not all about Wisconsin there. They had jerkey from Oregon for sale (prepacked, not the slabbed jerkey in the cooler unit), and even though there are heaps of cranberry bogs right around the shop, the crandberry chocolates were from New England. Really great ice creams, cheddar cheeses at varying ages (1-9 years), other cheeses and combo's you can sample, jams, salsas, fudge, caramels, souvenirs, popcorn and more! We sampled the white cheddar with cranberry and had to buy it! Plain cheddar slab of 3-year age was our choice. Hubby got the LadyBug flavor ice cream and loved it! Honestly I found it very disappointing. Very tourist feeling, and not in fun, good way. The Shell gas station next door seemed to have a better selection of cheese and local souvenirs. I am really glad I did not drive out of my way to go here. Also, the posted times online say they close at 6:00pm most weekdays, but when I arrived at the store, the sign on the door said they closed at 5:00pm most weekdays. (I visited in April.) read more

I don't care if you hit all the cheese shops in WI, you still need to make a stop here. It's the best one I've come across. I think it was my favorite stop on the trip home. If you spent a little over $100.00, you restrained yourself. The decor is black and white cow theme, including the roomy bathroom right in front. You buy more on an empty bladder. Next stop is the open display of cheese, with some super friendly folks asking you more then once if they can help you. We did a little stocking up on cheese and meats for Easter, unopened lasts 6 months. They sell all the accessories for cheese.They have the cutest things in miniature including food items. Up and down are aisles of condiments, jellies, syrups, etc. I even brought back a few little snack bags for the fish fry group. Then there's more refrigeration of meat, more cheese, bottled sodas. I found a new brand of rootbeer, Hank's. I start to check out, and at the counter is the most unusual bar of dark and white chocolate, back to the cow theme. If you're on your way home, and are planning a party, stock up here. read more

A must-do while in Tomah! This über touristy store carries a great selection of Wisconsin cheeses, sausage, candy and other treats. You can also be sure to find any sort of Wisconsin related souvenir trinkets like shot glasses, magnets, coffee mugs, etc. The staff is very friendly and will gladly oblige sample requests for cheese or ice cream. I can recommend the 4-year-old swiss, the 5-year cheddar, but my favorite was the smoked butterkase. I've been buying cheese from Humbird's for almost 30 years now. The first time I visited they were still in the old building. My wife grew up in the area and whenever we come back to visit relatives, a stop at Humbirds is mandatory. I'm also on their mailing list and have cheese shipped to me every year (they only ship fall-winter). As for the person complaining about lack of samples, they have always offered a sample of any cheese I asked to sample, Their 3 year cheddar is my favorite! read more
