MY. GOD. It was.** This was hands down one of the best sandwiches we've ever had. The bread was fresh and perfectly crisp on the outside while still soft enough to hold all the incredible fillings together. Everything tasted fresh, balanced, and thoughtfully put together. The menu has around 18 different combinations, and while they're happy to make some adjustments, I actually appreciated that they encourage you not to over-customize. Their combinations are designed so you can taste each ingredient the way it's intended. We went with **the Suicida and the Golosa**, and both were absolutely delicious. Each had its own personality, with layers of flavor that somehow worked perfectly together without becoming overwhelming. There's something about standing in line on a little Florentine street, watching these sandwiches being prepared, and then taking that first bite that makes the whole experience even better.

We made a quick left turn and saw a line of people waiting. We weren't necessarily sure what they were waiting for until we inquired. Most people were waiting for sandwiches - SCORE! We decided to get in line and realized how quickly the line was moving. Traffic was being moved by their workers who were assisting with menu suggestions. We quickly got up to the front of the establishment and realized how tiny it is inside. It was so cool to see an actual Italian deli in action. From what I heard, they source their ingredients from local farmers, too! I ordered the La Rosa and my husband ordered the Gregorio (in honor of our friend Greg!). We waited outside for a few minutes while they prepared our order. The sandwiches were absolutely delicious and the bread was surprisingly crispy. The cost was super reasonable, too, for how much food you are getting. We will be back!

And you're going to find out that while it looks like focaccia, it's actually a close cousin, schiacciata (a little lighter and crispier, so you feel better about crushing an entire loaf with your sandwich). You can get these sandwiches all over the city. All'Antico Vinaio is the famous one (or at least it's famous to me because they've opened up in NYC and told me about how famous they are), but these days I think that just means they're the most expensive and the most ubiquitous on social media. All I know is that you can't go wrong with Pino's. I was actually full from five days of stuffing my face with pasta and steak and everything else Florence has to offer, but when my buddy handed me one of these things, you better believe I ate the whole thing. It's just a beautiful piece of schiacciata sliced in half and layered fresh, tasty treats that cannot be bad when combined. There's usually a nice spread (often pistachio or pesto or hot pepper sauce), some excellent cheese (scamorza, brie, mozzarella, etc.) and some cured meats. I'll say it again: you cannot go wrong. Just get whatever sounds good to you, and eat that sandwich in the sunshine. Life doesn't get much better than that.

Pino's Sandwiches had quite the personality. It was decked out in banners and pennants of American universities. If you're from the USA, it almost felt like you were right at home. There seemed to be ample indoor seating. My husband was able to snag a table for us while I waited for our order. There was also seating outside. This was one of the few sandwich spots that offered a deli meat besides pork, which I was so thankful for. I got The Savage, which consisted of roast beef, burrata, smoked mozzarella, sun dried tomatoes, and pesto. I will go as far as saying that this was my favorite schiaciatta of all the ones I had on our Florence trip. The roast beef was really tender, and I absolutely loved the sun dried tomatoes. They weren't shriveled up like the ones we have back at home. The tomatoes were huge and burst full of flavor.

It's also a fun activity to peruse the market, taking in different sights, smells, and flavors. All of us ended up opting for Schiacciatas (large Italian sandwiches that are a staple in Florence) from Massimiliano Parri, which all ended up ranging from €10-12, depending on toppings - yes, it's more expensive than what you'd get from a traditional schiacciateria, but you're also paying for the market's location and convenience. We appreciated the fact that they shave the meat right in front of you! My schiacciata came with freshly shaved ham atop crusty white bread, slathered with burrata cheese, and sprinkled with arugula and figs (I opted for no additional olive oil, since I found the ham quite rich already). I loved the contrast of textures and flavors, though I will say that the bread ended up cutting the roof of my mouth! All in all, Mercato Centrale is a bit touristy, but still miles better (and cheaper) than most "Italian" sandwich places you'd find in the US (pro tip: save your receipt for free use of their bathrooms). The variety can't be beaten, prices are reasonable for a central market, and it's steps from some of Florence's most iconic spots.
