Despite the name of the place, they are not exclusively serving French food. They have pasta, steaks, and seafood. If anything, Chateau 1771 is a modern European restaurant serving favorite French, Italian, and Swiss food. When I first visited the place years ago, I was actually anxious about that moment when the waiter would hand me the check. European dining in the Philippines has always been equated with expensive fine-dining. But to my astonishment, the price was actually reasonable. I mean, it's not affordable and one would be crazy or filthy rich to eat in this kind of place every day. But for special occasions, I would recommend this place. My most recent visit was during my wife's birthday. It was a table for two and we had a late lunch. After a few moments of browsing through the menu, she asked for Croquette Salad, while I went for Butter-baked Oysters. For main, she had Vanilla Brick Spring Chicken, or grilled chicken served with vanilla bean dots. I ordered the Potence, the house specialty. It's basically steak where the meat is served hanging from a potence, or metal frame, and then set alight (by the waiter) with brandy. Their Pomelo Fruit Juice is a must try. I would recommend having a reservation when dining at Chateau 1771. While the place typically fills up during dinner, I find it perfect for a late afternoon hangout. The ambience can truly transport you somewhere in Europe.

You know how other shops have fresh fruit shakes but when you drink it it just tastes like sugar? Well, Chateau 1771's shakes are fresh, cold and it's the actual fruit. Oh, their flambeed coffees are amazing. Try their Irish coffee. You'll want more. For dessert, it doesn't matter whether you order a Creme Brulee or a Coffee Bean Sansrival. All of their desserts are excellent.

Expect a creamy and hefty pieces of pastry goodness. Their Almond Croissant (98 PHP) is more than just the sprinkle of almond slices you see, it's also filled with a sweet cream inside that just makes you want more. They only make 6 pieces a day which is odd, but hopefully more in the near future, as we certainly aren't the only fans. If you have time to splurge, suggest staying for a cup of their Hot Chocolate (190 PHP) it's served in a pot (330 ml) which is enough for 2 cups. Share it with a friend or simply indulge in the chocolatey goodness. Staff are courteous and efficient. Water is refilled timely and sometimes even before you even ask. First timers be at ease as the staff can explain fully the products they offer. Here's a tip: 50% off on all their goodies starting 9PM daily, but be quick you're going to be competing with the nearby residents for the little supply they have. We've dined here twice and when 9PM strikes the store is invaded and devoid of pastries in under 15 minutes, talk about a quick sale.

A former boss of mine told me that he really enjoyed the food there, and I remembered that 3 years later, when I was deciding where to take Grace on that all-important occasion. I made a reservation about 2 months in advance, just to be sure. I specified that it was going to be a proposal, so I made sure that they got me a booth instead of a table in the middle of the restaurant. I told them that at some point, I'd be asking a member of the staff to take pictures and videos, which they willingly agreed to. The day itself came, a few days before Grace's birthday so she would think it was just a birthday dinner. The staff were all smiles when we entered; they all knew, and they were excited for us. Our 7-course meal started, and it was all perfect. Seeing Grace's face light up with every bite she took just made me more excited for what was to come at the end of the meal: the moment I was gonna ask her to be my wife.

She was apprehensive at first because when she Googled about the restaurant, it said that students of International School for Culinary Arts and Hotel Management (ISCAHM) will be the ones cooking in the kitchen. I assured her that just because they're students doesn't mean that they don't know what they're doing. I was right! We started off our date with a French staple, escargot. The snails were swimming in butter and I envied them in that instance. We saluted their valiant sacrifice as we gobbled them up one by one. For the main course, she had steak and I had the sea bass with risotto. For my dish, the serving could have been bigger but it was as delicious as it can get. All in all, dining in Aubergine was a delight and something we'll definitely do again in the future.

Le Coude Rouge - Le Coude Rouge functions primarily as the Alliance Francaise de Manille's school's cafeteria

At that's what Le Coude Rouge at Alliance Française de Manille is precisely for. Functioning primarily as the language school's cafeteria, the hall it occupies also hosts exhibits, so the atmosphere would change depending on the art currently displayed. The thing that remains constant though is the no-frills, freshly prepared fare: traditional French recipes cooked using mostly locally sourced ingredients. I almost always order the Salade Nicoise, freshly prepared with the greens and onions still crisp, which I would douse with their seemingly simple yet orgasmic vinaigrette dressing - a concoction I still cannot manage to hack to this very day. From here, I usually fast track to the end, straight to the Café Maison (how could I say no at 35 pesos per cup?) and my favorite dessert of theirs: the Tarte Au Citron, sharp and tangy and surprisingly pairs well with the coffee. When the tart is not available, I get the Pain Au Chocolat, or chocolate croissant but somehow calling it such makes it feel (and perhaps also taste) fancier. I have also tried, and liked, some of their main courses: there's the Fruits de Mer Ou Papillottes, which more than anything is really drama in a meal as it is seafood with buttered vegetables baked in a paper pouch that I get to unravel before I dig in. Another dish that used to make me happy is the Petites Saucisses Ala Provencale - the mini sausages actually taste gamy and spicy and is further enhanced by rich tomato stew. (Though the last time I was there, this item was not in their menu.) On the other hand, the Coq Au Vin reminds me of our very own chicken adobo, except of course, this version is cooked in red wine. It should be mentioned that they serve wine appropriate to these dishes, in case you're in the mood for it. If you are interested in a lighter selection, perhaps for an afternoon snack, I would vouch for the Quiche Lorraine, and the Croque-Madame, which is actually just well-made ham and cheese sandwich served with an egg on top. Also, you know, for some reason, their French fries here is awesome. Maybe, this is the only place on Earth where I munch on them with the spicy Dijon mustard. And since this is a French restaurant, you couldn't go wrong with the Soupe A L'oignon, which is thick and tasty, unlike the consommé we are used too. But the real specialty of the cafeteria is the warm staff: a pair of jolly men who are always well-dressed, which I presume takes after Paris street fashion. With them is a personable lady in a chef's uniform who usually stays behind the counter, just by the espresso machine. (Later on, I found out that she is the talent behind the tarts I have grown to love.) Amusing is how they would greet bonjour! from across the room, and perhaps I have come here too often, but they are perceptive enough to predict or even make suggestions on what I might want to eat. Point is, they understand what they serve and a guest may expect them to be helpful in putting together a meal, which is a big help when faced with a menu dominated by a foreign tongue. Perhaps it could be the only mess hall in Manila where it is normal for conversations in French to swell in the air like the language truly dwells here, and for people with black hair to be outnumbered by blondes. In short, there are days when I would feel that I am the foreigner, which actually only succeeds in turning these lunch breaks into micro vacations which always end exactly as pleasant as they start. With the wait staff putting on the same sincere smile they had as they greeted me upon arrival, as they bid "merci" as I put away the table napkin and rise from my seat, to which I had learned to reply "de rien!"
