Essentially you point to what you want, say how much (or how many fishes) you want, they weigh it, clean it, and put it in a bag for you. It sounds simple but it's complicated as things like prices can be lost in translation, I once thought I was paying $1.89/pound but it turned out to be more like $4/pound for Bass, I think I need to practice my Vietnamese. No matter, the quality is good, the selection is good, the service is friendly, and the prices are very good.
